Yogurt cake with berry compote

_MG_2023fix02Even though summers in Belgium may not always be what you expect from summer to be, that being sunny and warm, these last couple of days have been exactly that. And warm sunny days are always accompanied with the smoky smell in the air as everybody takes out their grills and goes in full barbecue mode. This weekend we did just that, and as every meal needs a dessert I decided to make something lighter to complete a hard core meat overdose. The cake is an adapted version of the No-Bake Greek Yogurt & Berry Cheesecake from Bare Root Girl blog. It has a roasted almond base, a light yogurt middle and is topped with a slightly sour raspberry and blueberry sauce.

Poletje v Belgiji te ne vedno nagradi z vročino in soncem, a na srečo so bili zadnji dnevi prav prijetni. Tople in sončne dneve pogosto spremlja vonj po dimu, saj vsi privlečejo na plano svojo opremo in se prelevijo v žar mojstre. Pretekli vikend smo tudi mi naredili prav to! Ker vsak obrok potrebuje sladico, sem se odločila, da bom pripravila nekaj lažjega, saj se po mesnem predoziranju ne prileže nič drugega. Torta ima mandljevo podlago, lahko jogurtovo sredico in je prelita s kiselkasto malinovo in borovničevo omako.

Yogurt cake

INGREDIENTS for the CAKE | SESTAVINE za TORTO:

  • 300 g roasted almonds / praženih mandljev
  • 5 dried figs / suhih fig
  • 50 g usalted butter / masla

The filling | Polnilo:

  • 50 g confectioners sugar / sladkorja v prahu
  • 500 g yogut / jogurta
  • 250 ml heavy cream / sladke smetane
  • 7 leaves gelatine / listov želatine
  • 3 tbsp lemon juice / žlice limoninega soka

Cake baseIn a food processor mix all the ingredients for the base. Pulse until smooth. Line the bottom of a 23 cm (9-inch) springform pan with baking paper and press the base mixture into the bottom (after I press the mix, I like to tap it with the bottom of a glass to make it even more firm). Refrigerate for at least 30 min.

V multipraktiku zmešaj sestavine za podlago, da dobiš gladko maso. Dno okroglega pekača za torte obloži s papirjem za peko. Z maso prekrij dno pekača (na koncu z dnom kozarca potolči po celotni podlagi, da jo utrdiš) in ga postavi v hladilnik za vsaj 30 min.

In a bowl mix yogurt with sugar and lemon juice. After you pre soaked the gelatine, squeeze out the excess water, place the gelatine leaves in a smal skillet and melt it slowly (make sure it doesn’t come to a boil). Add a couple of spoons of the yogurt mixture into the gelatine and mix well. Add the gelatine mixture into the yogurt and mix until smooth. In a separate bowl beat the cream and gently fold it into the yogurt mixture.

V skledi zmešaj jogurt s sladkorem in limoninim sokom. Želatino namoči, ocedi in stisni odvečno vodo. V majhni kozici želatino raztopi (pazi, da ne zavre). V želatino dodaj nekaj žlic jogurtove mase in dobro premešaj. Želatino dobro vmešaj v preostalo jogurtovo maso. V drugi posodi stepi smetano in jo nežno vmešaj v jogurtovo zmes.

Pour the fill_MG_2015ing into the springform pan, tap it on the counter a couple of times to remove the air bubbles and refrigerate until firm.

Jogurtovo zmes prelij v tortni model in ga nekajkrat udari po pultu, da se znebiš zračnih mehurčkov. Torto postavi v hladilnik da se strdi.

ingredients for the berry compoteINGREDIENTS for the BERRY COMPOTE | SESTAVINE za PRELIV IZ JAGODIČEVJA:

  • 1 tbsp honey / žlica medu
  • juice of one lemon / sok ene limone
  • 1 tbsp corn starch / žlica koruznega škroba
  • 250 g frozen berries / zamrznjenenih malin in borovnic

_MG_2018This part is easy, just put all the ingredients in a small skillet and cook until the berries are soft and the sauce thickens a bit. Cool the sauce and then spread it over the yogurt cake.
_MG_2017Ta del je lahek, zmešaj vse sestavine v majhni kozici in kuhaj, da se jagodičevje zmehča in se omaka zgosti. Preliv ohladi in ga premaži po vrhu torte. 

Refrigerate the cake until that perfect time to serve it and treat your guests, and yourself of course, with a pretty and delicious treat. And since it’s quite healthy and low in sugar you can indulge in it guilt free and maybe even have a nice glass of sweet wine to go with it. Enjoy the goodies!_MG_2029fix

Torto shranimo v hladilniku dokler ne pride tisti pravi trenutek za sladico. Razvajajte svoje goste, in sebe seveda, s sladico, ki je lepa in fina. Ker je v njej malo sladkorja, je dokaj zdrava, zato si lahko brez krivde privoščite še en košček, ali pa jo pospremite s kozarcem sladkega vina. Uživajte v dobrotah!
