White chocolate chip cookies with raisins and pecans

My December has been super busy so far. The last two weeks turned around so fast and I almost had no time to cook or bake. December without baking is not a real December and that had to change. So on Sunday I took some time to make cookies, while listening to a Christmas songs vinyl plate that I bought in June on a garage sale (it was 50 euro cents, if you’re wondering). These cookies are delicious, they are crunchy on the outside and a bit chewy on the inside. Laurens started to eat them when they were just out of the oven and still soft and professionally described them as smoochy (no idea where he got that word from).

Moj december je bil do sedaj poln dela. Zadnja dva tedna sta minila kot bi mignil in res mi je manjkal čas za kuho in peko. December brez peke ni ravno december, zato sem dosedanje stanje ne-decembrstva morala spremeniti. V nedeljo sem si tako vzela nekaj časa in pekla piškote ob poslušanju božičnih pesmi na vinilki, ki sem jo kupila junija na boljšaku (bila je 50 centov, če vas zanima). Piškoti so bili odlični, hrustljavi na zunaj in žvečljivi (res ne vem, kako bi drugače rekla chewy v slovenščini) v notranjosti. Laurens jih je napadel, ko so bili ravno iz pečice in še vedno mehki, ter jih poznavalsko ocenil kot smoochy (ne vem, kje je slišal to besedo).

These are the best snack to eat during your favourite Christmas movie (my favourite ever is “How the Grinch stole Christmas”, nothing beats it) with a big cup of hot chocolate (or whatever drink you like with your cookies). I did not eat the cookies while watching a Christmas movie, because we are currently re-watching the Star Wars movies (I only saw the last 3 until now, so I’m actually watching the first ones in one piece for the first time), but beware, the Christmas cheesiness is still about to come. Ti piškoti so dober prigrizek med gledanjem božičnega filma (moj najljubši je “Kako je Grinch ukradel Božič”, nič ni boljšega kot je ta) z veliko šalico vročega kakava (ali katere druge pijače, ki vam prija ob piškotih). Jaz teh nisem jedla med gledanjem božičnih filmov, ker so trenutno na sporedu filmi Star Wars (do sedaj sem namreč v celoti videla le zadnje tri in sem si prve tri ogledala prvič v enem kosu), a božična pocukranost bo vsekakor kmalu na sporedu.

I normally make these cookies with cranberries, but since I did not check my pantry before I started to make them, I realized half way through that cranberries are not going to be an option since they were not where I thought they were. I didn’t want to let the fruity part of these cookies out, so I just swapped them with raisins, added a bit of cinnamon and what I got is a perfect Christmas-fied cookie. If you’re a cookie monster, you’ll devour these in minutes (I am and I ate waaay too much of them). They have a deep caramel flavour because I used brown sugar instead of white, they are cheewy, and filled with goodies like white chocolate chips, raisins and pecan nuts. They are made in less than an hour and well they can be gone in less than an hour as well.

Ingredients
  1. 1 2/3 cups (250 g) all purpose flour
  2. 1 tsp baking powder
  3. Pinch of salt
  4. 1 tsp cinnamon
  5. 1/2 cup (125 g) softened unsalted butter
  6. 1/4 cup (60 ml) sunflower oil
  7. 3/4 cup (150 g) firmly packed dark brown sugar
  8. 1 egg
  9. 1/2 tsp vanilla extract
  10. 1/2 cup (90 g) white chocolate chips
  11. 1/2 cup (80 g) raisins
  12. 1 cup (100 g) chopped pecan nuts
Instructions
  1. Mix flour, baking powder, salt and cinnamon in a bowl.
  2. Beat the sugar with butter and oil until creamy.
  3. Add the egg and vanilla extract and beat until combined.
  4. Mix in the dry ingredients, chocolate chips, raisins and pecan nuts.
  5. Form the dough into a 8-inch (20 cm) long log, wrap in cling film and refrigirate for at least 30 min (you can even freeze the dough at this point for later use, just defrost in the fridge before using).
  6. Preheat the oven to 190°C (375°C).
  7. Slice the dough 1/4-inch (5 mm) thick and place on cookie sheets (about 2 inches (4 cm) apart).
  8. Bake 10 min, or until just golden. Don't worry if the cookies are still soft, they will firm up during cooling.
  9. Transfer to racks to cool.

Te piškote ponavadi naredim z brusnicami, a ker predhodno nisem pregledala shrambe, sem šele na koncu ugotovila, da brusnic nimam. Nisem jih želela spustiti, zato sem jih le zamenjala z rozinami, dodala kanček cimeta in kar sem dobila je perfekten božični piškot. Če si piškotna pošast, boš te pojedla(-el) v minuti (jaz sem in vsekakor sem jih pojedla preveč). So karamelnega okusa, saj sem uporabila rjavi sladkor namesto belega in so polni dobrot kot so koščki bele čokolade, rozine in pekan orehi. Narejeni so v manj kot eni uri in, no, izginejo lahko tudi v manj kot eni uri.

Ingredients
  1. 250 g bele moke
  2. 1 čajna žlička pecilnega praška
  3. Ščepec soli
  4. 1 čajna žlička cimeta
  5. 125 g zmehčanega masla
  6. 60 ml sončničnega olja
  7. 150 g temnega rjavega sladkorja
  8. 1 jajce
  9. 1/2 čajne žličke vanilijinega ekstrakta
  10. 90 g belih čokoladnih koščkov
  11. 80 g rozin
  12. 100 g sesekljanih pekan orehov
Instructions
  1. Zmešamo moko, pecilni prašek, sol in cimet.
  2. Sladkor, maslo in olje stepemo v kremasto zmes.
  3. Dodamo jajce in vanilijin ekstrakt in zmešamo, da dobimo enotno maso.
  4. Dodamo suhe sestavine, čokolado, rozine in pekan orehe.
  5. Testo oblikujemo v 20 cm dolg valj, ga zavijemo v prozorno folijo in postavimo v hladilnik za vsaj 30 min (na tej stopnji lahko testo tudi zamrznemo za kasneje, pred peko ga le odtalimo v hladilniku).
  6. Pečico segrejemo na 190°C.
  7. Testo narežemo na 5 mm debele kroge.
  8. Piškote položimo na pekač, tako da so 5 cm oddaljeni od drug drugega.
  9. Pečemo jih 10 min, da se rahlo zlato rjavo obarvajo. Nič hudega, če so še malo mehki, strdili se bodo med hlajenjem.
  10. Postavimo jih na rešetko in ohladimo.
