Upside-down plum and coconut cake

When plums hit the stores you know that summer is gone. I am not one of those people that get all excited for autumn and when summer ends, I always get a bit melancholic. Don’t get me wrong, autumn has its perks, but the fact that I have to go trough months of cold, rainy weather does NOT make me very happy, quite the opposite.sliveWhen I was little I didn’t like plums. My grandfather has a couple of plum trees and every year when plum season was there I had to eat them. I didn’t like it, not that I didn’t like the taste, but they sometimes had worms in it, and I found that repulsive. Now I wish I had a couple of those at hand, they were so much better than the store bought ones.

Ne me narobe razumeti, tudi jesen je lepa, ampak dejstvo da so na sporedu meseci mrzlega in deževnega vremena me res ne veseli.
Image2Ko sem bila majhna nisem marala sliv. Moj nono ima nekaj sliv in vsako leto, ko so dozorele sem jih bila primorana jesti. Niso mi bile všeč, okus je bil že v redu, motilo me je to, da so bile nekatere črvive, to se mi je zdelo ogabno. Zdaj si želim, da bi imela nekaj tistih sliv pri roki, saj so veliko bolj okusne kot tiste iz trgovine.
upside-down plum cakeFor now those store bought will have to be enough. I had a bunch laying around in the kitchen and I wanted to bake something with them. So I checked on the internet and chose a nice recipe, it was a plum crumble cake. I put on my apron, turned on the oven and started mixing. I assumed I have all the ingredients, but I should have learned my lesson in the past – never assume and prepare all ingredients before starting. Well I realised half way through that I didn’t have enough butter so I had to improvise a bit and I replaced a bit of the butter with coconut oil (it was after all a coconut cake, so even better) and because I didn’t have enough butter for the crumble I decided that I would make an upside-down cake.
slive-9The cake turned out delicious, the coconut and plum flavour are perfectly complementing each other and it’s perfect just on its own, but if you want go ahead and add a bit of whipped cream or a scoop of ice cream. Did I learn my lesson? I don’t know, maybe sometimes it’s better to just improvise a bit.

Soft and moisty, delicious upside-down plum and coconut cake.

Ingredients
  1. 90g unsalted butter
  2. 30g coconut oil
  3. 90g caster sugar
  4. 2 eggs
  5. 100g greek yogurt
  6. 200g all purpose flour
  7. 1 tsp baking powder
  8. 80g coconut flour
  9. 400g plums
  10. 3 tbsp brown sugar
Instructions
  1. Preheat the oven to 180°C. Grease a 20cm cake pan. Remove the pits from the plums and cut them in quarters.
  2. In a bowl mix the flour, coconut flour and baking powder.
  3. In another bowl beat the butter, coconut oil and caster sugar until creamy. While mixing on medium speed add the eggs one by one. Add the greek yogurt and mix.
  4. Mix the wet and dry ingredients until combined.
  5. Place the plum quarters at the bottom of the pan and sprinkle the brown sugar on top. Pour over the cake batter and bake for 30-40min or until the toothpick inserted in the cake comes out clean.
  6. When the cake is done run a knife around the border and flip it on a plate to serve.
Notes
  1. If you are using a spring form cake pan place it on a deep sheet pan while baking as the juices might leak and spoil your oven.

Za zdaj bodo morale zadostovati tiste iz trgovine. Ker sem jih imela nekaj na zalogi, sem hotela nekaj speči. Na internetu najdem recept, ki mi je bil všeč, slivov kolač s kokosom. Nadenem si predpasnik, prižgem pečico in se lotim dela. Predvidevala sem, da imam vse potrebne sestavine, ampak lahko bi se kaj naučila iz preteklih napak – nikoli ne predvidevaj in vedno si sestavine pripravi preden začneš z delom. No na sredini sem ugotovila, da nimam dovolj masla zato sem morala improvizirati, del masla sem zamenjala s kokosovim oljem (bil je kokosov kolač, torej toliko boljše) in ker nisem imela dovolj masla za maslene drobtine, sem se odločila da bom naredila narobe obrnjeno torto.
slive-12Torta je bila na koncu odlična, okus kokosa in slive sta bila odličen par. Torta je dobra že sama posebi, če si pa želite ji lahko dodate stepeno smetano ali kepico sladoleda (ali oboje). Sem se kaj naučila iz svojih napak? Ne vem, mogoče je včasih boljše malo improvizirati.

Narobe obrnjena slivova in kokosova torta

Sočna in mehka slivova in kokosova torta.

Ingredients
  1. 90g zmehčanega masla
  2. 30g kokosovega olja
  3. 90g sladkorja
  4. 2 veliki jajci
  5. 100g grškega jogurta
  6. 200g moke
  7. 1 žlička pecilnega praška
  8. 80g kokosove moke
  9. 400g sliv
  10. 3 žlice rjavega sladkorja
Instructions
  1. Pečico segrejemo na 180 stopinj Celzija. Globok pekač za torte premera 20 cm namastimo z maslom. Slive očistimo, operemo, izkoščičimo in narežemo na četrtine.
  2. V skledo presejemo moko in jo zmešamo s pecilnim praškom in kokosom.
  3. V drugi skledi z električnim mešalnikom kremasto umešamo zmehčano maslo, kokosovo olje in sladkor. Med mešanjem postopoma, enega za drugim, dodamo jajca in mešamo, da dobimo rahlo in penasto zmes. V zmes nato vmešamo grški jogurt.
  4. Zmešamo mokre in suhe sestavine.
  5. Četrtine sliv razporedimo po dnu pekača in jih potresemo z rjavim sladkorjem. Biskvitno testo razporedimo po slivah in torto pečemo 30-40min ali dokler zobotrebec vstavljen v sredino ne pride ven čist.
  6. Ko je torta pečena, jo zvrnemo na krožnik in postrežemo.
Notes
  1. Če uporabljate pekač za torto, ki se odpre, ga med peko postavite na drug pekač, saj lahko sicer sokovi kapljajo na dno pečice.
