Poppy seed and strawberry cake with cream cheese and greek yogurt frosting

After a week of cold and rain, we woke up on Sunday with perfect blue sky and sunshine. It was about freakin’ time, because the lack of real spring was making me feel depressed. I’m the person that thrives when temperatures are above 25°C, so Belgian weather is and always will be a struggle. But let’s focus on the good days and Sunday was one of those. Potica with walnuts and pecans

Easter is here. I always liked this holiday. Easter brings along all the good stuff – coloured eggs, enormous amounts of chocolate and other goodies, that appear on our tables only in festive times. But apart from that, I like Easter because it announces that spring is here which brings along longer days and warmer, sunnier weather. Baked whole wheat chocolate donut bites

It’s less than a week from Carnival or Mardi Gras or however you call it and it’s time to make something appropriate for the occasion. Since this year Mardi Gras comes just on my birthday and I want my birthday to be filled with cake and not donuts (or maybe I should consider a donut cake), I decided I’ll indulge in donuts a week before. It doesn’t make a difference for me, since here in Belgium Mardi Gras is not so big as it is in some other countries. If there is one advantage of short autumn (and winter) days, it is that they force you to get in the cosy mode earlier in the day. And when I’m in the cosy mode I always feel like baking something. Persimmon (kaki) cake with white chocolate truffle frosting

So persimmons (sounds like some mythological creature, right?). I only recently found out how this fruit is called in English, I always knew them as “kaki”. Kaki is quite popular where I come from, there is even a yearly kaki festival in a town 10 min away from my home. I grew up with them, I was forced to eat them every autumn when my mother brought them home, I didn’t like them so much, they were too sweet for my taste and mushy (we had the soft variety, the one that is like a jelly). Brownie truffle graveyard cake for Halloween

So after I made this spider web cake for Laurens, I had to think about something to bring to a Halloween lunch at my work. We are working in a perfect Halloween party location, our building spooks us every single day, especially when you get trapped in the elevator (well since a month ago they are officially not safe to use anymore). We are preparing for the move in a brand new building (with hopefully functional elevators) and some of the groups have already moved. I never was a fan, I’m all about tradition and adapting some foreign holidays just because the stores and popular culture dictates me to do so, is not something I am fond of.
