Sugar free apple and plum pie

Lately I’m neglecting my blog. Not necessarily because of lack of inspiration, but more because life was quite busy in the past 2 months. Sadly when time is short, hobbies, which in my case means my blog, are the first ones to be neglected. We are living in our new house for a nice month now and I’m loving it. I love that we could paint it like we wanted, I love our new kitchen, I love the garden, but most of all I love the fact that it’s ours. Life is starting to settle just when fall is here. Fall for me means a drastic increase in my need for baking. Colder, darker, rainy days are just screaming for some cosy smell of fresh baked goods in the house.

Zadnje čase zapostavljam moj blog. Ne zaradi pomanjkanja navdiha ampak zato, ker je bilo življenje pretekla dva meseca precej živahno. Na žalost so takrat, ko nam primanjkuje časa, hobiji prvi, ki so postavljeni na stran. Že dober mesec živiva v najini novi hiši in jaz jo obožujem. Všeč mi je, da sva jo obarvala v barve, ki so nama všeč, obožujem novo kuhinjo, obožujem najin mali vrt, ampak še najbolj pa obožujem dejstvo, da je najina. Življenje se vrača v ustaljene tirnice ravno s prihodom jeseni in to pri meni pomeni izrazit porast v želji po peki. Hladni, temni in deževni dnevi kar kričijo po prijetnem vonju sveže pečenih dobrot v hiši.

And nothing is more “cosy” than a smell of a warm apple pie. I love making pies, they are so easy to make and you can “pimp” them however you like. This time I wanted a healthier version, so I made mine sugar-free. And what’s even better – this pie is also gluten-free and paleo. I know all the pie purists are now shaking their heads in disbelief, how could I do such a disgrace to a pie, but I don’t care. I wanted a pie and I wanted a healthy one, so this is what came out of it.

In nič ni bolj prijetnega, kot vonj po sveže pečeni jabolčni piti. Zelo rada pečem pite, so enostavne in z lahkoto jih narediš posebne z dodatkom začimb ali različnih sadnih kombinacij. Tokrat sem si zaželela zdrave različice, zato sem jo naredila brez sladkorja. In kar je še boljše, ta pita je brez glutena in paleo. Vem, da vsi “puristi” zdaj zmajujejo z glavo, češ kaj sem pa naredila iz pite, ampak me ne briga. Hotela sem pito in hotela sem, da je zdrava in to sem naredila.

It all starts with a good base, in pie’s case it’s the crust. I always stick to the classic pie ratio 3:2:1 (flour:fat:liquid) and I tried it this time as well. Most common flours in paleo world are coconut and almond. I used almond flour, because I didn’t want the coconut flavour to be too strong. The butter was replaced with coconut oil and I used an egg as the liquid and also as a binder, otherwise everything would just fall apart. When I made the dough and wrapped it in foil for chilling I already tried to flatten it as much as possible, so that I wouldn’t need to roll it out too much, the dough is not the easiest to handle. When I rolled out the dough I used cinnamon to dust the surface  which added lots of flavour. If you don’t want to lose time rolling out the dough, you can just transfer the flattened dough into the pie mold and spread it out using your fingers, it’s easier and faster. The filling was easier to adapt and work with. As I said I didn’t use any sugar, instead I used dried plums to add some sweetness to the apples. The end result was delicious. The crust was flaky and the filling just sweet enough.

Sugar free, gluten free and paleo apple and plum pie.

Crust
  1. 150 g (1 2/3 cups) almond flour
  2. 100 g (1/2 cup) coconut oil
  3. 1 egg
  4. Cinnamon for dusting
Filling
  1. 2 medium apples, peeled and grated
  2. A handful of pitted unsweetened dried plums
  3. Juice of half a lemon
  4. 1 tsp vanilla extract
  5. 1 tsp cinnamon
  6. 1 egg
  7. 1/3 cup almond flour
  8. 4 fresh plums halved and peeled
Instructions
  1. Melt the coconut oil and mix with almond flour. Beat the egg and mix in the dough (the dough will be quite sticky at this stage), wrap in clingfilm and flatten it as much as you can, refrigerate for at least one hour.
  2. Preheat the oven to 180°C/350°F.
  3. Prepare the filling. Put the grated apples, dried plums and juice of half a lemon in a skillet and cook on medium heat for about 15 min until the liquid evaporates and the plums fall apart.
  4. Add the cinnamon and vanilla extract and cook for about 10 minutes more. Set aside to cool.
  5. In a bowl beat the egg and add the almond meal. The consistency should be about the same as the pancake batter.
  6. Mix the egg mixture into the fruit, set aside.
  7. There are two options to put cover the pie dish with the dough. One is to roll out the dough on a cinnamon dusted surface, but this can be tricky as the dough likes to fall apart when transferring it to the dish. Second option is to dust your pie dish, put your chilled disk of dough in the dish and spread it out with your fingers – this works perfectly and is less messy.
  8. Blind bake the crust for 10 min.
  9. Take out the crust let chill for 5 min then spread the filling over the crust. Add the peeled plum halves on top and bake for 20 min.
  10. Let cool slightly and enjoy it absolutely guilt free. Best eaten within 2 days as the bottom becomes quite soggy afterwards, but the pie will not last that long anyway.

Bistvo dobre pite je dobra podlaga. Pri pripravi testa za pito se vedno držim pravila 3:2:1 (moka:maščoba:tekočina), tudi tokrat je bla to moja izhodiščna točka. Najbolj pogosto uporabljeni moki pri peki v paleo prehrani sta kokosova in mandljeva. Jaz sem izbrala mandljevo, saj nisem želela, da bi okus kokosa izstopal. Kot maščobo sem uporabila kokosovo olje in jajce kot tekočino in vezivo, saj je tako testo zelo krhko. Ko sem zamesila testo, sem ga zavila v folijo in ga dobro sploščila, da mi ga po hlajenju ni bilo potrebno preveč razvaljat, saj je tako testo precej težavno ohraniti v enem kosu. Po hlajenju lahko testo poskusite razvaljati na velikost pekača, jaz sem za posip podlage uporabila cimet, ki je testu dodal okus in hkrati preprečil, da bi se testo prijemalo podlage. Enostavnejši in hitrejši način pa je, da testo prenesemo v pekač in ga s prsti razvlečemo po pekaču. Priprava polnila za pito je enostavnejša, ker sem želela pito brez sladkorja sem le-to sladila s suhimi slivami. Končni rezultat je bila slastna pita. Testo je bilo krhko in polnilo ravno prav sladko. Ste na dieti, ki omejuje sladkor in potrebujete nekaj za potešitev želje po sladkem? Iščete recept za dišečo jabolčno pito brez glutena? Jabolčna pita s slivami brez sladkorja

Testo
  1. 150 g mandljeve moke
  2. 100 g kokosovega olja
  3. 1 jajce
Polnilo
  1. 2 srednje veliki jabolki
  2. Ena pest nesladkanih, razkoščičenih suhih sliv
  3. 1 žlička vanilijevega ekstrakta
  4. 1 žička cimeta
  5. 1 jajce
  6. 50 g mandljeve moke
  7. 4 svežih sliv, prerezanih na pol in olupljenih
Instructions
  1. Stopimo kokosovo olje in ga vmešamo v mandljevo moko. Stepemo jajce in ga vmešamo v testo (testo bo precej lepljivo). Testo zavijemo v prozorno folijo in ga sploščimo v disk. Testo postavimo v hladilnik za vsaj eno uro.
  2. Pečico segrejemo na 180°C.
  3. Pripravimo polnilo. V manjši kozici segrejemo naribana jabolka, suhe slive in limonin sok, zmes kuhamo na srednjem ognju približno 15min, da tekočina pokuha in suhe slive razpadejo.
  4. Vmešamo cimet in vanilijev ekstrakt in kuhamo nadaljnih 10min. Ugasnemo ogenj in pustimo, da se zmes ohladi.
  5. V skledi stepemo jajce in vmešamo mandljevo moko. Zmes naj bo podobne gostote kot testo za palačinke.
  6. Jajčno zmes umešamo v kuhano sadje in postavimo na stran.
  7. Testo za pito lahko v pekač prenesemo na dva načina. Testo lahko razvaljamo na s cimetom potreseni površini, kar pa je lahko precej težavno, saj je testo precej rahlo in lahko razpade, ko ga prenesemo v pekač. Druga možnost je, da s cimetom potresemo pekač in testo s prsti razvlečemo na želeno velikost. Druga metoda je enostavnejša in prav tako učinkovita kot prva.
  8. Testo pečemo 10 min na 180°C.
  9. Pečeno testo vzamemo iz pečice in pustimo, da se rahlo ohladi. Jabolčno polnilo razmažemo po testu in po vrhu razporedimo olupljene polovice sliv. Pito pečemo 20 min.
  10. Ko je pita pečena jo rahlo ohladimo in postrežemo.
