Stoofvleees, Belgian beef beer stew.

From my experience stoofvlees is one of the most popular dishes among Belgians, first place goes to fries, of course, and they are, unsurprisingly, eaten as a side to this dish too. So what is stoofvlees? As I wrote in my title, this is a Belgian beef beer stew, we can call it BBB stew. Although BBB is an acronym that stands for buik, billen, benen (which are Dutch words for abs, but and legs), and is a name of a certain type of aerobics class. The BBB I’m talking about today is surely not going to have the same effect as the latter BBB, quite the opposite.

Iz lastnih izkušenj lahko povem, da je stoofvlees ena najbolj priljubljenih jedi med Belgijci, na prvem mestu je seveda pomfri in ta je, pričakovano, priloga k tej jedi. Kaj je stoofvlees? Kot sem napisala v naslovu, je to belgijski golaž z govedino in pivom. Odlična jed za prihajajoče mrzle mesece, ko se naši trebuščki skrivajo pod širokimi puloverji, ki so naši najboljši prijatelji, ko se malo bolj najemo.

As I am not a Belgian, and not living here long enough, to mess with something so important as stoofvlees (they even have a national stoofvlees day!), the recipe I’m sharing here is not mine. I’m acting as a media, and as a Google Translator for you. The recipe is from Jeroen Meus, he is like a Belgian version of Jamie Oliver. He has his own TV show, cooks easy and everybody’s favourite meals, old ladies like him (you know, because, he is such a good guy) and he has a bunch of cooking books, he is super popular and I found out about his existence within a month of living here. Told you, just like Jamie.

Ker nisem Belgijka, in ne živim tu dovolj dolgo, da bi mešetarila z nečim tako pomembnim kot je stoofvlees (imajo celo državni dan stoofvlees-a!), recept, ki ga danes delim, ni moj. Tokrat sem le medij, opravljam vlogo Goole Prevajalnika, da ga vam ni treba uporabiti. Recept je last Jeroen-a Meus-a, on je belgijska verzija Jamie Oliverja. Ima svojo lastno TV oddajo, kuha enostavne jedi, ki so vsem všeč, stare mame ga imajo rade (zato ker je tak fejst fant) in ima en kup kuharskih knjig, je izredno priljubljen in za njega sem slišala v roku enega meseca življenja tu. Kot sem rekla, kor Jamie.

So what is so special about this beef stew. Well for one thing, even me, who is not a fan of meat stews, likes it. I have no idea how to describe the flavour to you, it’s a bit sweet and a bit bitter, with delicious deep flavoured sauce (don’t ask me what deep flavoured means, because I used that word just because I have no idea how to explain it to you). It has a lot of typical Belgian ingredients. First things first – beer (dark beer that is, but I also like to use strong blonde beer, it’s not soo sweet), second is delicious Luikse stroop (some really thick fruit jam, or fruit butter from Luik, hence Luikse), then there is peperkoek (some type of gingerbread), mustard (not really Belgian, but they do have a a couple of mustard museums, so quite traditional) and some even put chocolate in it.

Kaj je tako posebnega pri tem govejem golažu? No, že dejstvo, da je všeč meni, ki res ne maram golažev, pove veliko. Nimam pojma, kako naj vam opišem okus, je malo sladek in malo grenak, s slastno omako globokega okusa (ne me vprašat, kaj je globok okus, to sem napisala le zato, ker ne vem, kaj naj sicer napišem). Narejen je iz stevilnih tipičnih belgijskih sestavin. Prvo in najbolj pomembno je pivo (temno pivo, čeprav jaz rada uporabim močno svetlo pivo, ki je manj sladko), drugi je slasten Luikse stroop (nekakšen sadni žele, sadno maslo iz Luik-a, zato Luikse), potem je tu peperkoek (neke vrste medenjak), gorčica (sicer ne ravno belgijska, a imajo veliko muzejev o gorčici, tako da vsekakor tradicionalna) in nekateri dodajo tudi čokolado.

As with every other stew, you’ll need some time to make it. It needs to cook for about 3 hours, during which time the meat soaks in beer and other goodies and gets all soft (so soft that even people with dental prothesis can eat it without any problems). I like to cook it to the point when the meat starts to fall apart on it’s own, it’s delicious. Normally it is served with fries, but I never make fries at home, so if you’d come for stoofvlees at our place, you’d get it with oven baked or boiled potatoes. You can always break the rules and serve it in a taco, with pasta, rice, polenta or with some fresh baked bread.

Ingredients
  1. 1 kg (2.2 pounds) beef (tough, lean cuts)
  2. 2 big onions
  3. 1 bottle (about 1,5 to 2 cups) dark beer (I used strong blonde beer)
  4. 2 tbsp Luikse stroop (substitute for fruit butter)
  5. Fresh thyme (I use 1 tbsp dried thyme)
  6. 1 clove
  7. 2 bay leaves
  8. 1-2 slices of brown bread or gingerbread (I always use gingerbread)
  9. 2 tbsp mustard
  10. 1 splash (1-2 tbsp) cider vinegar
  11. 1 tbsp butter
  12. Salt and pepper to taste
Instructions
  1. Chop the onion and cut the beef in bite size pieces.
  2. In a big pot melt the butter and sautee the onion until translucent.
  3. Add the beef and cook until browned.
  4. In a separate skillet bring the beer to boil.
  5. Add the beer to the meat.
  6. Add the Luikse stroop (or fruit butter), thyme, clove and bay leaves.
  7. Spread the mustard on the (ginger)bread and add the slices to the stew.
  8. Cook for about 3 hours on low heat, until the meat is tender (mix and scrape the bottom every once in a while so that it doesn't burn).
  9. When the meat is ready add a splash of vinegar and salt and pepper to taste. I sometimes add a bit of water if I see that the sauce is too thick.
  10. Serve with a side of your choice.
Notes
  1. I couldn't try it, because I don't own one, but I think this dish can be easily made in a slow cooker.
  2. I always make it in big quantities and then just freeze it for later.

Kot za vsak drug golaž, tudi za tega potrebujete čas. Kuhati mora okoli 3 ure, med tem časom se meso lepo namaka v pivu in drugih dobrotah, da postane fino mehko (tako mehko, da ga lahko tudi ljudje s protezo brez problemov jejo). Jaz ga kuham tako dolgo, da meso že skorajda razpade, odlično je. Ponavadi je postrežen s pomfrijem, ampak jaz pomfirja doma nikoli ne delam, tako da če bi prišli k meni na stoofvlees, bi ga dobili s krompirjem pečenim v pečici ali pa kuhanim. Lahko pa prekršite pravila in ga servirate v tortilji, s pašto, rižem, polento ali le s kosom sveže pečenega kruha.

Ingredients
  1. 1 kg govejega mesa za golaž (čvrso, manj mastno)
  2. 2 veliki čebuli
  3. 1 steklenica (cca 3,3 dl) temnega piva (jaz sem uporabila močno svetlo pivo)
  4. 2 žlici Luikse stroop (zamenjate ga lahko za zelo gosto marmelado - marelično)
  5. Svež timijan (jaz uporabim žlico posušenega timijana)
  6. 1 nageljnova žbica
  7. 2 lovorjeva lista
  8. 1-2 rezini rjavega kruha ali medenjaka
  9. 2 žlici gorčice
  10. 1-2 žlici kisa
  11. Maslo
  12. Sol in poper po okusu.
Instructions
  1. Meso narežemo na majhne kose, čebulo sesekljamo.
  2. Maslo stopimo v večji kozici in cebulo popražimo, da ta postekleni.
  3. Dodamo meso in ga popečemo z vseh strani.
  4. V drugi kozici zavremo pivo.
  5. Pivo dodamo k mesu.
  6. Dodamo timijan, lovorjeve liste, nageljnovo žbico.
  7. Gorčico namažemo na kruh ali medenjak in rezino dodamo v golaž.
  8. Golaž kuhamo približno 3 ure, dokler se meso ne zmehča.
  9. Ko je golaž skuhan, prilijemo kis, posolimo in popopramo.
Notes
  1. Nisem preizkusila, a mislim da lahko ta golaž z lahkoto pripravite v električnem kuhalniku (slow cooker).
  2. Stoofvlees vedno pripravim v večji količini in ga zamrznem.
