Speculoos (gingerbread) cashew butter

I’ve been hooked on Speculoos pasta, since the first spoon I tried. For those of you in the English speaking world, Speculoos pasta is Biscoff spread. I especially like the crunchy version, I love to put it in my oatmeal, milk rice or greek yogurt. Oh, and I love the chocolate one, which I recently can’t find anymore in my local supermarket and that is making me very sad, this one is delicious on crêpes. For those that never tried it (oh, you guys don’t know what you’re missing) Speculoos pasta is a cookie butter, which are ground cookies with some extra fat added to make it spreadable. Obviously not healthy at all and should be portioned out when eaten. Should be, but we all know that nobody really does it. I did try, but 18 g of it is a really tiny amount.

V Speculoos namaz sem se zaljubila že po prvi žlici. Še posebej mi je všeč hrustljava različica, ki jo zelo rada vmešam v ovsene kosmiče ali mlečni riž. O, in tista s čokolado mi je tudi zelo všeč, ta je dobra na palačinkah, je pa zadnje čase ne najdem več v trgovini, kar me res žalosti. Za tiste, ki ne poznate Speculoos namaza (ne veste kaj zamujate), to je nekakšno piškotno maslo, zdrobljeni spekulas piškoti z nekaj dodatne masčobe, ki zmes naredi mazljivo. Zelo očitno nezdrava reč, ki jo moramo jesti zmerno in upoštevati priporočeno porcijo. Hm, to je lažje reči kot storiti, 18 g je res malo.

I wanted to make a healthier version of it, using cashew butter. I chose cashew butter because of its mild flavour. Almond or peanut butter flavours can sometimes be too strong to flavour them. I used speculoos (gingerbread) spice mix which I bought, but you can always make your own by mixing 4 parts cinnamon, 2 parts each nutmeg and ground cloves and 1/2 part ginger and 1/4 part each cardamom, white pepper and mace. I sweetened it with honey and maple syrup mix and a bit of vanilla extract.

Želela sem narediti bolj zdravo različico. Za to sem uporabila indijske oreščke, saj maslo indijskih oreščkov nima močnega okusa. Okusa mandljevega in arašidovega masla sta včasih premočna in ju ne moremo prilagajati. Pri pripravi sem uporabila kupljeno mešanico začimb za specukulas piškote, a to lahko pripravimo tudi doma, tako da zmešamo 4 enote cimeta, 2 enti muškatnega oreščka in klinčkov v prahu, 1/2 enote ingverja in 1/4 enote kardamoma, belega popra in macisa (del plodu muškatovca). Maslo sem sladkala z mešanico medu in javorjevega sirupa ter dodatkom vanilijevega exstrakta.

I’d be lying if I told you that you can not tell the difference with the original, you can’t beat the devil, but I did get a good healthy approximation of it. It’s still full of fat, but at least it’s the good kind of fat. And honey is much healthier than white processed sugar. This nut butter is delicious and it’s all dressed up in holiday flavours, you can even give it as a small present. It comes together in less than an hour and it can be stored in your fridge for several weeks.

Ingredients
  1. 11/2 cup cashews
  2. 3 tsp speculoos/gingerbread spice
  3. 1 tbsp honey
  4. 1 tbsp maple syrup
  5. 1 tsp vanilla extract
Instructions
  1. Preheat the oven to 200°C.
  2. Roast the cashew nuts for 10 min, turning half way.
  3. Let the nuts cool.
  4. Process the nuts in the food processor until a desired consistency is reached (15-20 min)
  5. Add the spices, honey, maple syrup and vanilla extract, mix until combined.
  6. Store in a glass container in the fridge for several weeks.

Lagala bi, če bi rekla, da je moj izdelek enak kot original, hudiča pa le ne mores premagati. Sem pa naredila dober, zdrav, približek. Tudi ta vsebuje veliko maščob, ampak tistih dobrih, zdravju prijaznih. In med je veliko bolj zdrav kot beli predelani sladkor. To maslo je slastno in polno prazničnih okusov, primerno je tudi kot darilo. Narejeno je v manj kot eni uri in lahko ga shranjujemo v hladilniku več tednov.

Ingredients
  1. 11/2 lončka indijskih oreščkov
  2. 3 čajne žličke spekulos začimbne mešanice
  3. 1 žlica medu
  4. 1 žlica jevorjevega sirupa
  5. 1 čajna žlička vanilijevega ekstrakta
Instructions
  1. Pečico segrejemo na 200°C
  2. Indijske oreščke pražimo 10 min in jih na polovici premešamo.
  3. Oreščke ohladimo
  4. Z multipraktikom zmešamo oreščke v maslo željene konsistence (15-20 min).
  5. Dodamo začimbe, med, javorjev sirup in vanilijev ekstrakt, ter zmešamo, da dobimo gladko maso.
  6. Maslo lahko shranjujemo v hladilniku nekaj tednov.
