Spaghetti squash patties with brazil nuts and chickpea flakes

Spaghetti squash is not so easy to find here. Last year I managed to get my hands on no more than one. This year I was a bit more lucky and bought two so far, but I believe I’ll manage to get some more since they are more abundant in stores this year. I know that spaghetti squash is “supposed” to be eaten as a low-carb substitute for spaghetti, but I decided to use mine a little bit different, since the strands were a bit shorter and not resembling to spaghetti at all.

“Špagentne” buče (če kdo ve, kako se temu pravilno reče v slovenščini, naj me razsvetli) tu ne najdeš zlahka. Lansko leto sem uspela v roke dobiti natančno eno. Letos sem imela več sreče in sem do sedaj kupila že dve, a verjamem, da bom lahko v svojo posest dobila še kakšno, saj so letos v trgovinah bolj popularne. Vem, da naj bi se ta buča uporabljala kot zamenjava za špagete, a jaz sem se odločila, da jo bom uporabila malo drugače, saj moja ni ravno spominjala na špagete ampak bolj na jušne rezance.

Do you like veggie fritters, or patties, or however you call them? I do, a lot. They are super easy to make, you can put in any vegetable you want, you can add cheese or bacon, so you can always make it a little bit different. And nuts, how do you feel about them? I love them, I’m actually a bit obsessed with them and I spend waaay too much money on them. At a certain point (a couple of months ago) I had about 10 kg of nuts in the house. Don’t forget we are a household of two, and one of these two is not so crazy about nuts as the other.  For some of them it was time to meet their end. I had a bunch of brazil nuts that I didn’t know how to use, I could eat them, but brazil nuts are quite caloric, with just 3 you consume about 100 kcal, and who can eat just 3 nuts, I’ll tell you who – not me! But even if you don’t care about the amount of calories you consume, you still have to be careful as they can be a bit toxic in large quantities (and they make you sleepy). If eaten right they are super healthy and they are packed with selenium.

So vam všeč zelenjavne polpete? Meni so, zelo. So zelo enostavne za pripravo, vanje lahko “skrijemo” katerokoli zelenjavo
, lahko dodamo sir ali slanino,vsakič jih lahko pripravimo na malo drugačen način. Kaj pa oreščki, kako so vam pa ti všeč? Jaz jih obožujem, mislim da sem malo obsedena z njimi in zanje zapravim celo premoženje. Pred nekaj meseci se je zgodilo, da sem jih v hiši imela okoli 10 kg. Ne pozabiti, da je naše gospodinjstvo sestavljeno iz dveh članov, od katerih eden ni tako navdušen nad oreščki kot drugi. Nekaterim oreščkom se je življenjska doba iztekala. Imela sem en kup brazilskih oreščkov, za katere nisem vedela, kako naj jih porabim. No, lahko bi jih brez problema pojedla kar tako, a brazilski oreščki so zelo kalorični, če poješ samo 3 si že zaužil 100 kcal in kdo lahko poje le 3 oreščke? Povem vam – jaz že ne! Tudi če vas količina zaužitih kalorij ne briga preveč, previdnost ni odveč, saj so lahko v velikih količinah toksični (in te uspavajo). V zmernih količinah so pa zelo zdravi in bogat vir selena.

I also spend a lot of money on different things in bioshops. So the other day I saw chickpea flakes and of course I had to get those (if you’re interested they are around 2,5 eur). I didn’t know what am I going to use them for (I was thinking to put them in homemade granola), but I knew I will.  And so I did, yesterday, when I made these delicious patties, I added them for some extra protein (you can substitute them for other flakes – oats, quinoa flakes…). I made these gluten-free by using rice flour, but you can use whatever flour you want. I also didn’t use a lot of spices, because I like the nutty flavour and because I had them with other spicy food, so plain was good. So here you have it: spaghetti squash patties with brazil nuts and chickpea flakes (now say it 3 times as fast as you can).

Ingredients
  1. 4 cups cooked spaghetti squash (about 1 medium squash)
  2. 1 cup rice flour (can substitute for other flour)
  3. 1 cup brazil nuts (about 30 nuts)
  4. 1 cup chickpea flakes (can substitute for other flakes - oat, quinoa...) + 1 cup to roll the patties in
  5. 2 eggs
  6. Pinch of salt and pepper.
  7. Optional: 2 tsp of spices of choice (curry, mediterranean, garam masala...)
  8. Oil for frying
Instructions
  1. Grind the nuts in a food processor, until it starts to resemble bread crumbs.
  2. Mix the squash, nuts, flour and flakes in a big bowl.
  3. Beat the eggs and mix with the rest.
  4. Add salt and spices if using.
  5. Make the patties and roll them in flakes.
  6. Pour the oil in a deep skillet about 1 inch (2,5 cm) deep and heat the oil.
  7. Fry the patties on both sides until golden brown.
  8. Serve warm.

Veliko denarja porabim tudi v biotrgovinah. Zadnjič sem v eni od teh videla čičerikine kosmiče in seveda sem jih morala kupiti (če vas zanima, bili so okoli 2,5 eur). Nisem vedela, zakaj jih bom uporabila (v mislih sem imela domačo granolo), a vedela sem, da jih bom. In sem jih. Včeraj, ko sem naredila te fine polpete, dodala sem jih kot vir beljakovin (uporabite lahko druge kosmiče, ovseni so tudi v redu). Polpete sem naredila z riževo moko, tako da so brez glutena, vi pa lahko uporabite katerokoli. Nisem jih preveč začinila, ker mi je všeč, da imajo okus po oreščkih in ker sem jih jedla z drugo začinjeno hrano. Tako, tu jih imate – polpetke iz špagetne buče z brazilskimi oreščki in čičerikinimi kosmiči (zdaj pa ime preberite trikrat kakor hitro morete, Laurensu je kar šlo).

Ingredients
  1. 4 kozarci (cca 600 g) skuhane špagetne buče (približno ena buča)
  2. 160 g riževe moke (ali katere druge)
  3. 130 g brazilskih oreščkov (okoli 30 oreščkov)
  4. 90 g čičerikinih kosmičev (ali ovsenih kosmičev) + 90 g za povaljat polpete
  5. 2 jajci
  6. Sol in poper
  7. Po želji: 2 žlički začimb po okusu (kari, mediteranske začimbe, garam masala...)
  8. Olje za cvrtje
Instructions
  1. Oreščke zmeljemo.
  2. Zmešamo bučo, oreščke, kosmiče in moko.
  3. Rahlo stepemo jajca in zmešamo z ostalim.
  4. Zmes začinimo.
  5. Oblikujemo polpete in jih povaljamo v kosmičih.
  6. V ponvi segrejemo olje in polpete pocvremo na obeh straneh.
  7. Postrežemo toplo.
