Shrimp ceviche my way

Since I started my journey with Whole30 (read more about it here) I’ve put together a lot of dishes that I came to love. One of those is shrimp ceviche. Ceviche is a dish originating in Latin America normally prepared with fresh fish that are “cooked” with citrus juices and mixed with different spices and herbs. The first time I had a ceviche was on our trip to Florida in March, I immediately loved it and knew I’d be making some version of it back home.

Odkar sem pričela s Whole30 programom (preberi več o tem tu) sem ustvarila številne jedi, ki bodo vsekakor postale stalnica na mojem krožniku. Ena teh je ceviche s kozicami. Ceviche je jed, ki izvira iz Latinske Amerike in je praviloma pripravljena iz svežih rib “skuhanih” v sokovih citrusov in začinjenih s številnimi različnimi začimbami in zelišči. Prvič sem ceviche jedla marca na najinem potovanju po Floridi in takoj sem vedela, da bom nekaj podobne poskusila pripraviti tudi doma.

Well it took a while to make it, but now I finally did. This shrimp ceviche is perfect for the summer time and can be great as a side on barbecues or eaten on its own as a main dish. I don’t know if I should call this a ceviche since shrimp is not raw and I added a lot of other goodies in the mix as well, but lets say it is a form of it. It’s a mixture between a ceviche and a salsa and it tastes amazing.

Sicer je trajalo kar nekaj časa, da sem se ga končno lotila ampak čakanje ni bilo zaman. Ta jed je idealna za poletne mesece, lahko jo postrežete kot prilogo na piknikih ali pa si jo privoščite samo kot glavno jed. Ne vem ali lahko temu rečem ceviche, saj sem kozice predhodno skuhala in v jed dodala veliko drugih sestavin. Je nekakšna mešanica med cevichem in salso, ki pa je neverjetno dobrega okusa.

You can make it more (or less) spicy by adding more (or less) chillies and ginger and it can be easily prepared in advance, in fact it is even better, because all the juices have time to mix and infuse the shrimp. It comes together in under one hour and it’s both delicious and healthy. Use the shrimp ceviche to top a fish dish or serve it with some tortilla chips as an appetizer, believe me, it will be gone in no time.

Ingredients
  1. 1 mango
  2. 2 avocados
  3. 1/2 cucumber
  4. 1 red bell pepper
  5. 2 cups cherry tomatoes
  6. 3 spring onions
  7. 1/2 red onion
  8. A couple of springs of parsley, basil and chives
  9. 2 chillies
  10. 1/2-inch ginger, grated
  11. Juice of 2 limes
  12. Juice of 1/2 lemon
  13. 18 oz. (500 g) peeled shrimp
  14. 2 tbsp ghee (or butter)
  15. 3 garlic cloves, mashed
  16. Juice of 1/2 lemon
  17. Salt and pepper to taste
Instructions
  1. Chop mango, avocado, cucumber, bell pepper, tomatoes in bite sized pieces that are more or less the same size and put in a plastic bowl (or any other material that is not metal).
  2. Chop the spring onion, red onion and herbs (basil, parsley, chives) and add to the rest.
  3. Cut the chillies lengthwise and remove the seeds. Chop the chillies as small as you can and add to the rest.
  4. Peel and grate the ginger.
  5. Mix everything with citrus juices.
  6. In a pan melt the ghee (or butter) cook the shrimp until a bit brown (about 5 min).
  7. Add the mashed garlic and cook 1 min until fragnant.
  8. Add juice of 1/2 lemon and mix.
  9. Set aside to cool.
  10. When the shrimps are cool add to the rest (add everything, also the bits of garlic left in the pan).
  11. Season with salt and pepper.
  12. Enjoy immediately or set aside in the fridge for 1 hour so that the juices have time to mix and marinate the shrimp.
Notes
  1. If you want to have your ceviche less spicy, simply add less chillies and ginger.

Lahko ga naredite bolj ali manj pikantnega, tako da prilagodite količino čilijev in ingverja. Jed lahko z lahkoto pripravite vnaprej, v bistvu je tako še boljša, saj se vsi sokovi premešajo in vpijejo v kozice. Pripravljena je v manj kot eni uri in je prav tako slastna kot zdrava. Cheviche lahko postrežete na vrhu ribjih jedi ali kot predjed s tortilja čipsom, verjemite mi, da bo hitro izginil.

Ingredients
  1. 1 mango
  2. 2 avokada
  3. 1/2 kumare
  4. 1 rdeča paprika
  5. 2 lončka češnjevih paradižnikov
  6. 3 mlade čebule
  7. 1/2 rdeče čebule
  8. Nekaj vejic peteršilja, bazilike in drobnjaka
  9. 2 čilija
  10. 1 cm kos ingverja
  11. Sok 2 limet
  12. Sok 1/2 limone
  13. 500 g olupljenih kozic
  14. 2 žlici ghee-ja (ali masla)
  15. 3 stroki česna
  16. Sok 1/2 limone
  17. Sol in poper
Instructions
  1. Mango, avokado, kumaro, papriko in paradižnik narežemo na kocke približno enake velikosti in vse zmešamo v večji plastični skledi (lahko tudi iz drugega materiala, naj le ne bo kovinska).
  2. Sesekljamo mlado čebulo, rdečo čebulo ter zelišča in dodamo k ostalemu.
  3. Čilije prerežemo po dolžini in odstranimo semena. Čilije sesekljamo in dodamo k ostalemu.
  4. Ingver olupimo in naribamo k ostalem.
  5. Vse skupaj premešamo s sokovi citrusov.
  6. V ponvi stopimo ghee (ali maslo).
  7. Kozice popečemo na vseh straneh, okoli 5 min.
  8. Dodamo česen in kuhamo približno 1 min da zadiši.
  9. Dodamo sok 1/2 limone, premešamo in postavimo na stran, da se ohladi.
  10. Ko so kozice hladne jih dodamo (vse, tudi koščke česna) k ostalim sestavinam.
  11. Vse skupaj posolimo in popopramo in dobro premešamo.
  12. Postrežemo takoj ali pa postavimo v hladilnik za 1 uro, da se vsi sokovi premešajo in marinirajo kozice.
Notes
  1. Če želite jed manj pekočo, po želji zmanjšajte količino čilijev in ingverja.

    1. No, lahko je tudi steklena ali keramična. Ne sme bit kovinska, ker da zaradi kisline “pločevinkast” priokus.
