Roasted balsamic “forgotten vegetables”

I know, I know, I’m not discovering warm water with this recipe, but it’s one of my favourite ways to prepare roasted vegetables and it should be found on my blog as well. This time I roasted the “forgotten vegetables”. For those of you who never heard the term (although I think you are in minority) these are vegetables that in the past were widely used, but have not been used a lot recently, either because they look “weird” or because people were not used to eating them as a child and didn’t even know they can be quite delicious. People are more and more informed and “back to nature” mentality is helping with the return of these vegetables to our plates.

Saj vem, da s tem receptom ne odkrivam tople vode, ker pa je en mojih najljubših načinov priprave zelenjave, se mi je zdelo nujno, da ga objavim na blogu. Tokrat sem pekla “pozabljeno zelenjavo”. Za tiste, ki niste za to besedno zvezo še nikoli slišali (čeprav mislim, da vas je malo takih), to je tista zelenjava, ki so jo v preteklosti precej uporabljali, dandanes pa ne, bodisi zaradi izgleda ali pa zato, ker ljudje ne vedo kako slastna je ta zelenjava. Trenutno priljubljeno mišljenje in “nazaj k naravi” način življenja so pripomogli k povratku te zelenjave na naše krožnike.

One of these vegetables are yellow and purple carrots. I honestly don’t taste any difference, but the yellow ones are maybe a bit less sweet than our well known friend – orange carrot. Carrots are delicious when roasted, so when I had some of the forgotten (they were literally forgotten, as they were sitting in my pantry and almost begining to rot) yellow and purple ones at home I knew that the best way to enjoy them is to cover them with balsamic and garlicky dressing, pop them in the oven and let them caramelize.

Ena od teh pozabljenih zadevic so rumeni in vijolični korenčki. Njihov okus je skoraj popolnoma enak tistim oranžnim, lahko so le malo manj sladki. Korenčki so slastni, ko so pečeni in ko sem imela nekaj tistih pozabljenih (ti so skorajda res bili pozabljeni, saj so mi malodane zgnili v shrambi) sem vedela, da je najboljši način priprave ta, da jih prekrijem z balzamično-česnovim prelivom in jih porinem v pečico, da lepo karamelizirajo.

This is a delicious way to get more vegetables into your diet. I love to eat it as a side dish, but you can always add a bit of goat cheese, some grains and turn everything in a hearty and filling salad, perfect for winter time. It’s also very easy and quick to make, just peel and cut the carrots (or any other root vegetables you have on hand), cover them in dressing and bake for 20 min. You can also make it in big batches and have it for a couple of days – it saves major time when preparing dinner.

Ingredients
  1. 2 pounds yellow and purble carrots
  2. 2 tbsp olive oil
  3. 2 tsp garlic powder
  4. 2 tbsp balsamic glaze
  5. Pinch of salt and pepper
Instructions
  1. Preheat the oven to 250°C (480°F).
  2. Peel and cut the carrots in 5 cm (2 inch) pieces.
  3. Place the carrots in a bowl and add all the remaining ingredients, mix well to cover the carrots in dressing.
  4. Place carrots on a baking sheet and bake for 20 min.

To je slasten način, da vnesete več zelenjave v vašo dieto. Jaz jih najraje jem kot prilogo, lahko jim pa dodate malo kozjega sira in kakšno zrnje (riž, pira, ajda, ječmen) in vse skupaj spremenite v zdravo in nasitno solato primerno za zimski čas. To je odlična rešitev, ko vam primanjkuje časa za kuho. Korenčke (ali drugo gomoljno zelenjavo) olupimo in narežemo, začinimo in pečemo 20 min. Lahko jih pripravite tudi v večjih količinah in jih imate za nekaj dni, to vam bo vsekakor prihranilo nekaj časa pri pripravi večerje.

Ingredients
  1. 1 kg rumenega in vijoličnega korenja
  2. 2 žlici olivnega olja
  3. 2 čajni žlički česna v prahu
  4. 2 žlici balzamične glazure
  5. Ščepec soli in popra
Instructions
  1. Pečico segrejemo na 250°C.
  2. Korenje olupimo in narežemo na 5 cm velike kose.
  3. V skledi zmešamo korenje in ostale sestavine, dobro premešamo, da je korenje prekrito z začimbami.
  4. Korenje stresemo na pekač in pečemo 20 min.
