Octopus salad

Some weeks ago I had a strange craving. Well maybe it was not really a craving, but more a wish. You know, when you remember a dish and then you’re like “Damn, I would like to have that now”. It was an octopus salad that I wanted. I don’t know how I thought of it, but I did. I inquired around where to buy an octopus and found out that people don’t really eat them here and because it was not really urgent and I’m lazy, I didn’t spend much time on looking for it either. But then my parents came to visit and I kindly requested some octopus to be brought with them. Afterwards, I had all I needed, to make this delicious octopus salad, at hand.

Pred nekaj tedni sem imela nenavadno poželenje. No, morda je bila bolj kot poželenje le majhna želja. Veste tisto, ko se spomnete na neko hrano in si mislite: “Zdaj pa imam res imam gušt po…”. V mojem primeru se je šlo za hobotnico v solati. Nimam pojma zakaj sem se spomnila na to jed, a sem se in škoda je bila narejena. Ko sem povprašala naokoli, kje lahko kupim hobotnico, sem ugotovila, da hobotnic tukaj ne jejo prav pogosto in ker moje poželenje ni bilo tako močno in ker sem lena, se nisem niti kaj dosti trudila, da bi jo našla. Potem pa je prišel čas, ko so prišli starši na obisk in poglej si ti oportunista, sem mamo prosila naj s sabo prinesejo še nekaj hobotnic. In so jih, tako da sem zdaj imela vse kar potrebujem za potešitev mojih želja.

This dish is quite easy to make and will definitely impress your guests. First, you need to cook the octopus with some soup veggies (celery, carrots, onion…) until tender, depending on the size this will last 1-2 hours, then you need to wash away the “skin”, just rinse with cold water and you’ll get it off in seconds. The rest is child’s play – cut in small pieces, add chopped parsley, garlic, olive oil, lemon juice and season with salt and pepper, mix and devour. It’s best to leave it to marinate for a couple of hours, but if you really can’t wait you can also eat it right away. I like to serve it with fresh and lightly toasted bread and it’s great as a crostini topping. Octopus salad is a perfect appetizer, but it can also be a healthy lunch (then you can eat more of it).

Ingredients
  1. 1 pound (500 g) cleaned musky octopus
  2. 3 stalks of celery
  3. 2 medium onions, cut in quarters
  4. 2 medium carrots, halved
  5. 2 bay leaves
  6. Salt, pepper
  7. Big bunch of parsley
  8. 2 cloves of garlic
  9. Juice of half a lemon
  10. Olive oil
Instructions
  1. Put the octopus, celery, carots, onions and bay leaves in a pot add enough water just to cover.
  2. Add some salt and pepper and bring to boil.
  3. Lower the heat and simmer for about 1h - 1,5h until the octopus is tender.
  4. Rinse the octopus under cold running water to remove the purple skin - if you gently rub the octopus with your fingers it will go off easily.
  5. Cut the octopus in small pieces (lets say pea sized) and put in a bowl.
  6. Chop a big bunch of parsley and add to the octopus.
  7. Mince 2 garlic cloves and add to the octopus.
  8. Squeeze the juice of half a lemon and add generous amount of olive oil to coat everything.
  9. Season with salt and pepper and put in the fridge to marinate for a couple of hours before serving.
Notes
  1. This dish can be easily prepared a day ahead.
  2. It's delicious served on top of garlicky crostini.

Priprava hobotnice v solati je zelo enostavna in gostje so nad jedjo vedno navdušeni. Hobotnico moramo najprej skuhati do mehkega skupaj z nekaj jušne zelenjave (zelena, korenje, čebula), kar traja 1-2 uri, odvisno od velikosti. Ko je hobotnica skuhana jo speremo pod mrzlo vodo, da odstranimo “kožico”. Vse ostalo je otroška igra – hobotnico zrežemo na majhne koščke, dodamo sesekljan peteršilj, česen, olivno olje in limonin sok, začinimo s soljo in poprom, zmešamo in pohrustamo. Jed je najboljša, ko se hobotnica že nekaj ur marinira v prelivu, če pa res ne morete počakati, jo lahko pojeste kar takoj po pripravi. Jaz jo rada postrežem s svežim, rahlo popečenim kruhom in je odlična na brusketah. Hobotnica v solati je odličen prigrizek ali predjed, lahko pa si jo privoščimo tudi kot glavno jed (v tem primeru je lahko pojemo več ;)).

Ingredients
  1. 500 g očiščene (muškatne) hobotnice
  2. 3 stebla zelene
  3. 2 srednje veliki čebuli, narezani na četrtine
  4. 2 srednje velika korenčka, prerezana na pol
  5. 2 lovorjeva lista
  6. Sol in poper
  7. Velik šopek peteršilja
  8. 2 stroka česna
  9. Sok pol limone
  10. Olivno olje
Instructions
  1. Hobotnico, zeleno, korenje, čebulo in lovorjeva lista postavimo v velik lonec in prilijemo toliko vode, da je vse pokrito.
  2. Dodamo sol in poper in zavremo.
  3. Znižamo temperaturo in kuhamo 1 uro do 1,5 ure.
  4. Hobotnico speremo pod mrzlo vodo, da odstranimo vijolično kožico.
  5. Hobotnico narežemo na majhne koščke in postavimo v skledo.
  6. Sesekljamo peteršilj in česen in dodamo hobotnici.
  7. Iztisnemo sok pol limone in dodamo dovolj olivnega olja, da je vse prekrito.
  8. Začinimo s soljo in poprom in postavimo v hladilnik, da se hobotnica marinira nekaj ur.
Notes
  1. To jed z lahkoto pripravimo dan vnaprej.
  2. Odlična je na vrhu popečenega kruha, ki smo ga premazali s česnom.
