Cauliflower rice risotto with ground chicken

Do you like risotto? Of course you do. Everybody in their right mind likes risotto. I love it. I don’t make it that often, because it does not really make great leftovers, unless you make arancini, but that is a story on its own. I know it’s a weird reason, but I really like to cook meals that last me for at least two days (less work, more free time). Anyway, the other day I really felt like risotto, but since I am still on Whole30 that was not an option, so I opted to make some compliant approximation of it. The result was cauliflower rice risotto with ground chicken. Since I had to leave out the two main ingredients, those being rice and parmesan cheese, this really was just an approximation, but a delicious one nonetheless. And since cauliflower is loaded with good stuff as you can read in this very in depth article written by Helen from Well-Being Secrets, this dish is a healthy bomb, one worth adding to your everyday diet.

Imate radi rižoto? Seveda jo. Vsak pri zdravi pameti ima rad rižoto. Jaz jo obožujem. Zadnje čase je ne pripravljam pogosto, ker ostanki niso najbolj okusni naslednji dan, no, ostanke bi lahko uporabila za pripravo arancinov, ampak ti so čisto druga zgodba. Vem, da je to čuden razlog, ampak rada kuham jedi, ki jih imam vsaj za 2 dni (manj dela, več prostega časa). Zadnjič mi je rižota res zapasala, ker pa sem še vedno na Whole30 programu, se ta ni skladala s smernicami, zato sem se odločila, da bom pripravila približek, ki programu ustreza. Naredila sem rižoto iz cvetačnega “riža” z mletim piščančjim mesom. Ker sem iz jedi morala črtati dve glavni sestavini, riž in parmezan (ta je po mojem mnenju glavna sestavina), je bil rezultat res le približek, ki pa je bil kljub temu zelo okusen.

Cauliflower rice is a known and widely used substitute for rice in paleo world. My food processor recently broke down, so I had to use a cheese grater to make the cauli rice. I used the florets from one head of cauliflower and that gave me about 3 cups of cauli rice (I’ve put the rest of the cauliflower to good used and made a potato mash with cauliflower, but you can also use it in soups and stews as well). Parmesan cheese was a bit more difficult to replace. I love the creaminess and flavour it gives to the dish. After some reading, I found out that  vegans use ground nuts with nutritional yeast as mock parmesan cheese. I just used some nutritional yeast to give some depth of flavour and decided that I like the end result even if it’s not as creamy as a risotto should be.

Cvetačni riž je znana zamenjava za riž v paleo prehrani. Pred kratkim se mi je pokvaril kuhinjski robot, zato sem za pripravo riža uporabila kar ribežnik za sir. Uporabila sem cvetove ene glave cvetače in tako dobila približno 3 skodelice riža (steblo sem skuhala in uporabila za cvetačno-krompirjev pire :), lahko pa ga uporabite v juhah in obarah). Zamenjava za parmezan je bila malce bolj težavna. Po raziskovanju sem se naučila, da vegani kot nadomestek parmezana uporabljajo zmlete oreščke s prehranskim kvasom (kvas, ki je deaktiviran ampak še vedno vsebuje vse vitamine in minerale, to ni instant kvas, ki se ga uporablja pri peki). Parmezan je delno odgovoren za to, da je rižota “kremasta” in to obožujem, sem se pa tokrat temu odpovedala in v moj približek rižoti dodala le nekaj prehranskega kvasa, ki je dodal jedi malce več okusa.

It’s healthy, low in carbs, filling and delicious. I also like the fact that this dish is budget friendly as both cauliflower and ground meat are ingredients that don’t cost a lot. Another plus point of cauliflower rice risotto is that it makes great leftovers. It reheats well and it’s not at all mooshy. Now go and make some cauli rice!

Ingredients
  1. 2 tbsp ghee (or butter)
  2. 1 big onion
  3. 300 g (10 oz) ground chicken
  4. 2 garlic cloves
  5. 3 cups caulifower rice (made from florets from 1 head of cauliflower)
  6. 1 cup (250 ml) chicken stock.
  7. 2 tbsp nutritional yeast (optional)
  8. 4 tbsp fresh chopped parsley
  9. Salt and pepper
Instructions
  1. Make the cauliflower rice. Simply grate the caulifloer florets on a cheese grater or pulse in a food processor (do not overmix else it will be mooshy).
  2. Chop the onions, garlic cloves and parsley.
  3. Melt the ghee in a large skillet.
  4. Sautee the onion until soft and translucent.
  5. Add the ground chicken and cook until brown.
  6. Add the garlic and cook for 1 min.
  7. Add the cauliflower rice, chicken stock and nutritional yeast and cook for about 5 min so that the liquid is reduced.
  8. Mix in the fresh parsley and season with salt and pepper.
  9. Serve warm.
Notes
  1. Makes great leftovers, just reheat in the microwave.

Rižota iz cvetačnega riža je hitro kosilo in je zelo enostavna za pripravo. Je zdrava, z nizko vsebnostjo ogljikovih hidratov, nasitna in slastna. Všeč mi je dejstvo, da je ta jed primerna za vsak žep, tako cvetača kot mleto meso sta sestavini, ki ne staneta veliko. Še en dodatni plus te jedi je, da so ostanki super za kosilo naslednji dan. Primerna je za pogret in se ne spremeni v pacasto zmes. No kaj se čakate, pojdite naribat nekaj cvetačnega riža!

Ingredients
  1. 2 zlici gheeja (ali navadnega masla)
  2. 1 velika čebula
  3. 300 g mletega piščančjega mesa
  4. 2 stroka česna
  5. 3 skodelice cvetačnega riža (narejenega iz cvetov 1 glave cvetače)
  6. 1 skodelica (250 ml) piščančje jušne osnove
  7. 2 žlici prehranskega kvasa (lahko tudi izpustiš)
  8. 4 žlice sveže sesekljanega peteršilja
  9. Sol in poper
Instructions
  1. Naredimo cvetačni riž. Preprosto naribamo cvetove cvetače oziroma jih sesekljamo v kuhinjskem robotu (ne pretiravat, da ne nastane kasa).
  2. Sesekljamo čebulo, česen in peteršilj.
  3. V večji posodi stopimo ghee.
  4. Popražimo čebulo, da ta postekleni.
  5. Dodamo mleto meso in popražimo z vseh strani.
  6. Dodamo česen in kuhamo, da zadiši.
  7. Vmešamo cvetačni riž, jušno osnovo in prehranski kvas.
  8. Kuhamo 5 min, da tekočina pokuha.
  9. Vmešamo svež peteršilj in začinimo s soljo in poprom.
  10. Postrežemo toplo.
Notes
  1. Ostanke lahko uporabimo naslednji dan.
