Lately I’m neglecting my blog. Not necessarily because of lack of inspiration, but more because life was quite busy in the past 2 months. Sadly when time is short, hobbies, which in my case means my blog, are the first ones to be neglected. We are living in our new house for a nice month now and I’m loving it. I love that we could paint it like we wanted, I love our new kitchen, I love the garden, but most of all I love the fact that it’s ours. Life is starting to settle just when fall is here. Fall for me means a drastic increase in my need for baking. Colder, darker, rainy days are just screaming for some cosy smell of fresh baked goods in the house. Cauliflower rice risotto with ground chicken

Do you like risotto? Of course you do. Everybody in their right mind likes risotto. I love it. I don’t make it that often, because it does not really make great leftovers, unless you make arancini, but that is a story on its own. I know it’s a weird reason, but I really like to cook meals that last me for at least two days (less work, more free time). Anyway, the other day I really felt like risotto, but since I am still on Whole30 that was not an option, so I opted to make some compliant approximation of it. The result was cauliflower rice risotto with ground chicken. Since I had to leave out the two main ingredients, those being rice and parmesan cheese, this really was just an approximation, but a delicious one nonetheless. Lemon tahini spirulina dressing

Grilled veggies are a quick and delicious meal all year long, but appear on our plates more often in the summer months. When I’m having grilled vegetables, I like flavour them with different marinades or dressings. Olive oil, garlic, parsley and lemon juice is my usual flavour combo, but this time I felt like experimenting and made a tahini-based dressing/sauce. Shrimp ceviche my way

Since I started my journey with Whole30 (read more about it here) I’ve put together a lot of dishes that I came to love. One of those is shrimp ceviche. Ceviche is a dish originating in Latin America normally prepared with fresh fish that are “cooked” with citrus juices and mixed with different spices and herbs. Roasted balsamic “forgotten vegetables”

I know, I know, I’m not discovering warm water with this recipe, but it’s one of my favourite ways to prepare roasted vegetables and it should be found on my blog as well. This time I roasted the “forgotten vegetables”. For those of you who never heard the term (although I think you are in minority) these are vegetables that in the past were widely used, but have not been used a lot recently, either because they look “weird” or because people were not used to eating them as a child and didn’t even know they can be quite delicious. Whole grain pizza with red beets, chanterelles and goat cheese

Until recently I ate red beets only in a pickled form. My grandmother used to make pickled red beets every year and when there were no other vegetables for lunch, pickled red beets would be served instead. I loved it as a child (and still do), which might  come as a surprise. Me and my sister would compete whose tongue got more red, we ate a few pieces and then started showing our tongues to each other, as you can imagine we were very well mannered. Speculoos (gingerbread) cashew butter

I’ve been hooked on Speculoos pasta, since the first spoon I tried. For those of you in the English speaking world, Speculoos pasta is Biscoff spread. I especially like the crunchy version, I love to put it in my oatmeal, milk rice or greek yogurt. Oh, and I love the chocolate one, which I recently can’t find anymore in my local supermarket and that is making me very sad, this one is delicious on crêpes. For those that never tried it (oh, you guys don’t know what you’re missing) Speculoos pasta is a cookie butter, which are ground cookies with some extra fat added to make it spreadable. Obviously not healthy at all and should be portioned out when eaten. Should be, but we all know that nobody really does it. Spaghetti squash patties with brazil nuts and chickpea flakes

Spaghetti squash is not so easy to find here. Last year I managed to get my hands on no more than one. This year I was a bit more lucky and bought two so far, but I believe I’ll manage to get some more since they are more abundant in stores this year. Jota, Slovenian sauerkraut stew

What can take you home the fastest – a car, a plane, or homemade food? For me food would be the answer to this question. It’s a funny feeling when you eat something from home in another country, it’s comforting, makes you feel like you’re home (not that I don’t feel comfortable where I am now, but home will always be home). When I moved to Belgium I realized that I miss the food which I hated as a child, but came to love growing up. I also realized I never watched my mother or grandmother make it, even though they told me countless times: “Come and watch me cook, you will need it one day!”. My answer to those comments was always: “I don’t like that food, I don’t need to learn how to make it.” Cooking was the last thing on my mind when I was a teenager.
