Poppy seed and strawberry cake with cream cheese and greek yogurt frosting

After a week of cold and rain, we woke up on Sunday with perfect blue sky and sunshine. It was about freakin’ time, because the lack of real spring was making me feel depressed. I’m the person that thrives when temperatures are above 25°C, so Belgian weather is and always will be a struggle. But let’s focus on the good days and Sunday was one of those. It was a picture perfect day – woke up a bit later than normal, had a lazy morning with some good pastry for breakfast, went for a run to burn that pastry, had a healthy lunch, an afternoon bake sesh’ and “stuck-in-the-couch” evening, only a day at the beach would beat it.  Continue reading “Poppy seed and strawberry cake with cream cheese and greek yogurt frosting”

Happy birthday to me! And a brownie cake with chocolate truffle frosting, caramel sauce and almond praline.

On Saturday it was my birthday, it’s the day when I have a right to my own cake, which, since I don’t live at home anymore and thus away from another potential cake maker – my mother, have to make myself. That is OK though, it’s an activity I like (if everything goes as planned) and always results in something good. This year I wanted something extra chocolatey so I went for a cake with brownie bottom, white chocolate and milk chocolate truffle cream and, and, and caramel sauce in between layers. Chocolate cake with cream puffs

How was your Christmas? I hope it was filled with good food and spent with people you love the most. This year I was the dessert maker for Christmas dinner and lunch. I took the job very seriously and here I am showing you one of the two cakes. I know I am a bit late for posting Christmas desserts, but since this cake can be made for other occasions as well, the delay is not a big deal. Persimmon (kaki) cake with white chocolate truffle frosting

So persimmons (sounds like some mythological creature, right?). I only recently found out how this fruit is called in English, I always knew them as “kaki”. Kaki is quite popular where I come from, there is even a yearly kaki festival in a town 10 min away from my home. I grew up with them, I was forced to eat them every autumn when my mother brought them home, I didn’t like them so much, they were too sweet for my taste and mushy (we had the soft variety, the one that is like a jelly). Brownie truffle graveyard cake for Halloween

So after I made this spider web cake for Laurens, I had to think about something to bring to a Halloween lunch at my work. We are working in a perfect Halloween party location, our building spooks us every single day, especially when you get trapped in the elevator (well since a month ago they are officially not safe to use anymore). We are preparing for the move in a brand new building (with hopefully functional elevators) and some of the groups have already moved. _MG_2023fix02Even though summers in Belgium may not always be what you expect from summer to be, that being sunny and warm, these last couple of days have been exactly that. And warm sunny days are always accompanied with the smoky smell in the air as everybody takes out their grills and goes in full barbecue mode. This weekend we did just that, and as every meal needs a dessert I decided to make something lighter to complete a hard core meat overdose.
