Brownie truffle graveyard cake for Halloween

So after I made this spider web cake for Laurens, I had to think about something to bring to a Halloween lunch at my work. We are working in a perfect Halloween party location, our building spooks us every single day, especially when you get trapped in the elevator (well since a month ago they are officially not safe to use anymore). We are preparing for the move in a brand new building (with hopefully functional elevators) and some of the groups have already moved. One of them was the pathology department and the floor where they resided is now deserted. There are some fun people at my work and they had this brilliant idea to organize a Halloween lunch in one of those rooms.

Potem, ko sem naredila to torto s pajkovo mrežo za Laurensa, sem se morala domisliti kaj bom nesla v službo za naše kosilo za Noč čarovnic (bilo bi bolj smiselno, če recem Dan čarovnic). Stavba v kateri delam, je idealna lokacija za zabavo na Noč čarovnic, vsak dan nas prestraši, še posebno takrat, ko si ujet v dvigalu (no, pred enim mesecem so jih označili kot nevarna za uporabo). Čakamo na selitev v novo zgradbo, ki naj bi se zgodila pred 2 leti, pa smo še vedno tu. Nekatere skupine so se že preselile, ena od teh je bil oddelek za patologijo in nadstropje v katerem so bivali, je zdaj zapuščeno. Delam z zabavnimi ljudmi in nekdo je imel briljantno idejo, da bi organizirali kosilo za Noč čarovnic v eni od tistih zapuščenih sob.

A party at night would be much better, but I don’t think some people would be pleased with that, so we’ll keep it civilised. I needed something easy and quick to make, because during weekdays I don’t have a lot of time to bake. I thought about a brownie truffle cake, everyone likes brownies and I had some leftover mascarpone so I decided to make a truffle frosting. The brownie recipe is from The golden book of baking. I was not original with the decoration idea, it’s a well known graveyard, it works and it’s easy. I used Oreo cookies as “dirt” and tombstones and candy laces as worms.

Zabava ponoči bi bila veliko boljša, a mislim, da nekaterim osebam to ne bi bilo najbolj po godu, zato se bomo lepo obnašali. Zelela sem pripraviti nekaj enostavnega in hitrega, saj med tednom nimam veliko časa za peko. Hotela sem nekaj čokoladnega, saj imajo vsi radi čokolado, tako da sem se odločila, da bom pripravila brownie (rjavčkovo) trufel torto, z “zemljo” in nagrobniki iz Oreo piškotov in črvi. If you still don’t know what to bring to your Halloween party this weekend, here is an idea for you. The cake itself is delicious, rich chocolate brownie base, covered in chocolate truffle frosting with Oreo crumbs. This is far from healthy, but it tastes amazing, if you like chocolate that is, but come on, who doesn’t like chocolate. If you skip the decoration you can always make it as a dessert for another occasion, you can use other cookies for the crumbs on top (gingersnaps would work wonderfully), or top the cake with fresh fruit (raspberries anyone?).

Rich, chocolate brownie base with delicious chocolate truffle frosting.

Brownie
  1. 2/3 cup (100 g) all purpose flour
  2. 1/2 tsp baking powder
  3. 1/4 tsp salt
  4. 1/3 cup (90 g) unsalted butter
  5. 4 oz (125 g) dark chocolate, coarsely chopped
  6. 1 cup (200 g) sugar
  7. 2 large eggs, lightly beaten
  8. 1/2 tsp vanilla extract
Chocolate truffle frosting
  1. 2/3 cup (160 g) whole cream
  2. 1/2 cup (130 g) mascarpone cheese
  3. 6 oz (180 g) chocolate (I used half dark and half white)
Assembly
  1. Oreo cookies (cca 16 pieces)
  2. White fondant
  3. Lace candy
The brownie
  1. Preheat the oven to 180°C (360°F).
  2. Butter a 8-inch (20x20 cm) baking pan.
  3. Combine the flour, baking powder and salt in a large bowl.
  4. Melt the butter and chocolate in a double boiler over gently simmering water.
  5. Remove from heat and stir in the sugar.
  6. Cool slightly and add the eggs beating until just combined.
  7. Mix in the dry ingredients.
  8. Pour in the baking pan and bake for 20-30 min until dry on top and firm to touch (don't overbake otherwise it's dry).
  9. During baking prepare the chocolate truffle cream.
The chocolate truffle frosting
  1. Boil the whole cream in a skillet.
  2. Break the chocolate in pieces in a larger bowl.
  3. Pour the whole cream over the chocolate and mix with a spatula until chocolate is melted.
  4. Beat in the mascarpone cheese.
Assembly
  1. If your brownie feels a bit dry (or if you baked it a day before) poke a few holes in it and pour some milk to moisten.
  2. If you have a glas baking pan arange some of the lace candy on the sides of the pan, so that it looks like the worms are under the surface.
  3. Pour the truffle frosting over the brownie base.
  4. Set a couple of Oreos aside, the rest pulse in the food processor to make "dirt".
  5. Spread the crumbs over the frosting.
  6. Cut the sides of the Oreos you set aside to make the "tombstones" and place them on the "graveyard".
  7. Arange the lace candy all over the "graveyard".
  8. Make the skulls - take a piece of white fondant and make a droplet shape, flatten a bit the pointy side of the droplet. Make two holes for the eyes, two small lines where the nose is and poke some small holes where the teeth are.
  9. Place the sculls on your cake.

Če ste povabljeni na zabavo na Noč čarovnic in ne veste kaj bi prinesli s sabo, tukaj je moj predlog. Torta je slastna, bogata podlaga iz rjavčkov prekrita s čokoladno trufel kremo z drobtinicami Oreo piškotov. To je daleč od zdrave hrane, ampak tu pa tam se lahko malo pregrešimo. Če spremenite dekoracijo, lahko to torto uporabite kot sladico za kakšno drugo priložnost, uporabite lahko drobtine iz drugih piškotov (speculoos oz. medenjaki bi bili odlični), ali pa uporabite sveže sadje (jaz glasujem za maline).

Rjavček
  1. 100 g bele moke
  2. 1.2 žličke pecilnega praška
  3. 1/4 žličke soli
  4. 90 g masla
  5. 125 g črne čokolade
  6. 200 g sladkorja
  7. 2 jajci
  8. 1/2 žličke vanilijevega ekstrakta
Trufel krema
  1. 160 g smetane za stepanje
  2. 180 g čokolade (jaz sem uporabila pol črne pol bele)
  3. 130 g mascarponeja
Sestava
  1. 16 Oreo piškotov
  2. Beli fondant
  3. Gumijaste vezalke (sladkarije).
Rjavček
  1. Pečico segrejemo na 180C.
  2. Namastimo globok pekač 20x20 cm.
  3. Zmešamo moko, sol in pecilni prašek.
  4. Maslo in čokolado stopimo nad vodno kopeljo.
  5. Vmešamo sladkor.
  6. Pustimo, da se malo ohladi in vmešamo jajca.
  7. Vmešamo suhe sestavine in vanilijev ekstrakt.
  8. Pečemo 20-30 min, da se na vrhu posuši in da je čvrst na dotik.
  9. Med tem, ko se rjavček peče, naredimo trufel kremo.
Trufel krema
  1. Zavremo smetano.
  2. V posodo nalomimo čokolado.
  3. Smetano prelijemo prek čokolade in s spatulo mešamo, da se stopi.
  4. Dodamo mascarpone in zmešamo, da dobimo gladko maso.
Sestava
  1. V primeru, da je rjavček suh (ali če smo ga pripravili dan prej) vanj naredimo nekaj lukenj in ga prelijemo z mlekom, da ga navlažimo.
  2. Če imamo steklen pekač lahko na rob postavimo nekaj gumijastih vezalk, da izgledajo kot črvi pod zemljo.
  3. Rjavčka premazemo s trufel kremo.
  4. Nekaj Oreo piškotov postavimo na stran, ostale zmeljemo v drobtine.
  5. Drobtine posujemo po torti.
  6. Ostalim Oreo piškotom odrežemo stranice, da naredimo "nagrobnike" in jih zapičimo v torto.
  7. Gumijaste vezalke razporedimo po "zemlji", da dobimo "črve".
  8. Naredimo lobanje - beli fondant oblikujemo v kapljasto obliko, špičasti konec malo sploščimo. Naredimo dve luknji za oči, zarišemo nos in zobe.
  9. Lobanje postavimo na "pokopališče".
