Happy birthday to me! And a brownie cake with chocolate truffle frosting, caramel sauce and almond praline.

On Saturday it was my birthday, it’s the day when I have a right to my own cake, which, since I don’t live at home anymore and thus away from another potential cake maker – my mother, have to make myself. That is OK though, it’s an activity I like (if everything goes as planned) and always results in something good. This year I wanted something extra chocolatey so I went for a cake with brownie bottom, white chocolate and milk chocolate truffle cream and, and, and caramel sauce in between layers. Oh and there is also almond praline hidden in there. Don’t judge me – it was my birthday and I can eat whatever I want.

V soboto je bil moj rojstni dan, dan na katerega mi pripada torta, ki jo, odkar ne živim več doma, torej daleč od osebe, odgovorne za peko tort v družini – moje mame, moram narediti sama. To me ne moti, saj je dejavnost, ki mi je všeč (če gre med peko vse kot po maslu) in se v večini primerov konča z nečim slastnim. Letos sem si zaželela nekaj zelo čokoladnega, zato sem naredila torto z rjavčkom, trufel oblivom iz bele in temne čokolade ter karamelno omako. Oh in nekje vmes se skriva tudi mandljev praline. Ne me obsojat – navsezadnje je bil moj rojstni dan, takrat lahko jem kar mi srce poželi.

This cake may look complicated, but it’s not. It does need some time to make as you need to chill the cake so it’s better to make it a day ahead, but apart from that the most complicated thing is maybe making the caramel sauce (which you can always buy) or the almond praline (which you can also buy). You can make it as a big cake (the recipe below is for about 10-12 people) or in individual mini cakes if you have the molds. Since it’s almost Valentine’s day I made mine heart shaped.

Ta torta morda izgleda zakomplicirano, ampak v resnici ni. Potrebujete pa precej časa za hlajenje, zato je boljše, če se jo pripravi dan vnaprej. Kar je morda bolj težavno je priprava karamelne omake (katero lahko kupite, če vam igranje s sladkorjem ni všeč) in priprava mandljevega pralineja (tega lahko tudi kupite). To torto lahko naredite v enem kosu (recept spodaj je za 10-12 ljudi) ali pa v obliki mini tortic, če imate modelčke. Ker je skoraj valentinovo, sem moje naredila v srčkastih modelčkih.

If you want to impress someone on Valentine’s day – this is the dessert to make. It’s also perfect to make if you’re single since this cake will make you fall in love with it and you will not need any other company. But beware – sugar induced coma is inevitable, so if you’re planning to do some activity that requires a lot of movement afterwards (hey I’m not suggesting anything, I’m just saying – don’t go for a run afterwards), better eat one of those low-cal desserts (or none at all if you can). This cake is not for the faint-of-heart but it will make you moan with pleasure, so definitely worth all the calories!

Ingredients
  1. 1/2 cup caramel sauce
Almond praline powder (skip if you use store bought)
  1. 1 1/2 cup (300 g) sugar
  2. 1cup (180g) roasted almonds
Brownie
  1. 2/3 (100 g) all purpose flour
  2. 1/2 tsp baking powder
  3. 1/4 tsp salt
  4. 1/3 cup (90 g) butter
  5. 4 oz (125 g) dark chocolate, coarsely chopped
  6. 1 cup (200 g) sugar
  7. 2 eggs, lightly beaten
  8. 1/2 tsp vanilla extract
Dark chocolate truffle layer
  1. 2/3 cup (160 g) whole cream
  2. 6 oz (180 g) dark chocolate
  3. 1/2 cup (130 g) mascarpone cheese
White chocolate truffle layer
  1. 1 1/3 cup (300 g) whole cream
  2. 12 oz (350 g) white chocolate coarsely chopped
  3. 1 cup (225 g) mascarpone cheese
Instructions
  1. If you are not using store bought caramel sauce and almond praline powder first prepare these.
Caramel sauce
  1. I always use the recipe from Sallys’s baking addiction blog and just leave out the salt. Here is the link: http://sallysbakingaddiction.com/homemade-salted-caramel-recipe/
Almond praline powder
  1. Melt the sugar in a deep skillet, mixing with a rubber spatula or wooden spoon.
  2. When all the sugar is melted, cook the caramel until it reaches dark amber colour (be careful not to burn it as it will taste bitter).
  3. Mix the roasted nuts in the caramel, try to cover all the nuts with the caramel, work fast as the caramel will solidify and become very sticky almost immediately.
  4. Spread the nuts on a baking sheet lined with a baking paper and let the praline cool completely.
  5. To make the powder put the almond praline in the food processor and mix until you get the desired consistency.
The brownie
  1. Preheat the oven to 180°C (360°F).
  2. Butter a 8-inch (20x20 cm) baking pan.
  3. Combine the flour, baking powder and salt in a large bowl.
  4. Melt the butter and chocolate in a double boiler over gently simmering water.
  5. Remove from heat and stir in the sugar.
  6. Cool slightly and add the eggs beating until just combined.
  7. Mix in the dry ingredients.
  8. Pour in the baking pan and bake for 20-30 min until dry on top and firm to touch (don't overbake otherwise it's dry).
  9. During baking prepare the chocolate truffle creams.
The chocolate truffle frosting
  1. Make first the dark chocolate frosting and then the white.
  2. Boil the whole cream in a skillet.
  3. Break the chocolate in pieces in a larger bowl.
  4. Pour the whole cream over the chocolate and mix with a spatula until chocolate is melted.
  5. Beat in the mascarpone cheese and set aside.
  6. Prepare the white chocolate truffle frosting on the same way following steps 2-4.
Assembly
  1. If you’re using individual cake molds, cut the brownie with the mold so it covers the bottom. If making one big cake place the brownie on the bottom of a square springform cake pan.
  2. Spread a thin layer of caramel sauce over the brownie.
  3. When the dark chocolate truffle frosting stiffens, place it in the piping bag and pipe 1 cm (1/2 inch) thick lines of the frosting over the brownie about 1 cm (1/2 inch) apart.
  4. Sprinkle about 3 tbsp of almond praline powder over it.
  5. Gently pour the white chocolate truffle frosting on the cake. Let the cake chill for at least 2 h so that the frosting stiffens.
  6. Drizzle the cake with caramel sauce and sprinkle with almond praline for a finishing touch.
  7. When ready, pas with a knife along the sides of the cake and gently remove the cake mold.
Notes
  1. I did not write any time estimate on the recipe. I needed about 4 hours to prepare everything and then left the cake overnight. If you are not making your own caramel sauce and almond praline powder this time can be reduced for 1 h. Then it of course depends on how fast or slow you work, so I would let you decide how much time to take for it (better too much than too little).

Če želite na valentinovo koga očarati – to je sladica, ki jo morate pripraviti. Odlična je tudi za samske, saj vas bo tako navdušila, da druge družbe ne boste pogrešali. Ampak pozor – sladkorna koma je neizbežna, tako da če po večerji načrtujete kakšno aktivnost, ki zahteva veliko miganja (nič ne namigujem, samo povem – ne it teč potem, ko ste se s tem posladkali), boljše da si izberete kakšno bolj lahko sladičko (ali pa nobene, če vam to uspe). Ta torta ni za tiste s švoh srcem in prava kalorična bomba, a je vsekakor vredna pregrehe.

Rjavčkova torta s čokoladno kremo in karamelo

Ingredients
  1. 1/2 lončka karamelne omake
Mandljev praline (preskočite, če boste le-tega kupili)
  1. 300 g sladkorja
  2. 180 g praženih mandljev
Rjavček
  1. 100 g bele moke
  2. 1.2 žličke pecilnega praška
  3. 1/4 žličke soli
  4. 90 g masla
  5. 125 g črne čokolade
  6. 200 g sladkorja
  7. 2 jajci
  8. 1/2 žličke vanilijevega ekstrakta
Trufel krema iz temne čokolade
  1. 160 g smetane za stepanje
  2. 180 g temne čokolade
  3. 130 g mascarponeja
Trufel krema iz bele čokolade
  1. 300 g smetane za stepanje
  2. 350 g bele čokolade
  3. 225 g mascarponeja
Instructions
  1. Če boste karamelno omako in mandljev praline naredili doma, najprej pripravite le-ta.
  2. Karamelno omako vedno pripravim po receptu iz bloga “Sally’s baking addiction”, le da ne dodam soli. Povezavo do recepta lahko najdete tu: http://sallysbakingaddiction.com/homemade-salted-caramel-recipe/
Mandljev praline
  1. V globoki kozici med mešanjem s silikonsko lopatko ali leseno kuhavnico stopimo sladkor.
  2. Ko se sladkor stopi, le-tega kuhamo nekaj minut, da postane temne jantarjeve barve - malo sveteljši kot javorjev sirup (pazimo, da karamele ne zažgemo, saj bo sicer grenkega okusa).
  3. V karamelo vmešamo pražene mandlje, dobro premešamo, da so vsi mandlji prekriti s karamelo, delati moramo hitro, saj se karamela hitro strdi in postane zelo lepljiva.
  4. Karamelizirane mandlje razporedimo po pekaču, ki smo ga predhodno obložili s peki papirjem in pustimo, da se popolnoma ohladijo.
  5. Karamelizirane mandlje zmešamo v multipraktiku, da dobimo praškasto zmes.
  6. Rjavček
  7. Pečico segrejemo na 180C.
  8. Namastimo globok pekač 20x20 cm.
  9. Zmešamo moko, sol in pecilni prašek.
  10. Maslo in čokolado stopimo nad vodno kopeljo.
  11. Vmešamo sladkor.
  12. Pustimo, da se malo ohladi in vmešamo jajca.
  13. Vmešamo suhe sestavine in vanilijev ekstrakt.
  14. Pečemo 20-30 min, da se na vrhu posuši in da je čvrst na dotik.
  15. Med peko rjavčka, naredimo trufel kremo.
  16. Trufel krema
  17. Najprej pripravimo kremo iz temne čokolade nato tisto iz bele čokolade.
  18. Zavremo smetano.
  19. V posodo nalomimo temno čokolado.
  20. Smetano prelijemo prek čokolade in s spatulo mešamo, da se stopi.
  21. Dodamo mascarpone in zmešamo, da dobimo gladko maso. Postavimo na hladno.
  22. Postopek ponovimo z belo čokolado.
Sestava
  1. Če uporabljate majhne tortne modelčke, z njimi izrežemo kos rjavčka, da ta prekrije dno. Če pripravljate veliko torto, rjavčka položimo na dno kvadratnega modela za torte.
  2. Na rjavčka namažemo tanko plast karamelne omake.
  3. Ko se trufel krema iz temne čokolade malce strdi, z njo napolnemo slaščičarsko vrečko in na rjavčka iztisnemo približno 1 cm debele vzporedne črte, 1 cm narazen.
  4. Po torti potresemo okoli 3 žlice pralineja.
  5. V model nežno vlijemo belo čokoladno kremo.
  6. Torto postavimo na hladno za vsaj 2 uri, najraje pa čez noč.
  7. Torto pokapljamo z nekaj žlicami karamelne omake in po vrhu potresemo mandljev praline.
  8. Preden vzamemo torto iz modela ob robu potegnemo z nožem in nato model nežno odstranimo.
Notes
  1. Na recept nisem napisala časa potrebnega za pripravo. Jaz sem za torto potrebovala približno 4 ure in jo nato pustila čez noč, da se hladi. Če karamelne omake in mandljevega pralineja ne boste delali sami, se čas priprave skrajša za približno eno uro. Ker pa je odvisno od vasega tempa v kuhinji, vam bom prepustila, da se sami odločite koliko časa rezervirati za pripravo te torte (boljše preveč kot premalo).

    Ta “Rjavčkova torta” zveni noro dobra…komaj čakam, da jo naredim za nečakinjin rojstni dan!
    Lahko vprašam kje si kupila 20X20cm pekač za brownije?

      Pekač sem kupila v Belgiji, bi ga pa verjetno dobila v kakšni bolje založeni trgovini v Sloveniji, Muller ali kak Merkator Hipermarket (ugibam), lahko pa uporabiš tudi kakšne druge dimenzije, ki se ujemajo po površini.
