Baked whole wheat chocolate donut bites

It’s less than a week from Carnival or Mardi Gras or however you call it and it’s time to make something appropriate for the occasion. Since this year Mardi Gras comes just on my birthday and I want my birthday to be filled with cake and not donuts (or maybe I should consider a donut cake), I decided I’ll indulge in donuts a week before. It doesn’t make a difference for me, since here in Belgium Mardi Gras is not so big as it is in some other countries. I do miss it sometimes, I like to dress up and overeat with donuts.

Slab teden je do pusta, zato sem se odločila, da bom pripravila nekaj priložnosti primernega. Ker je letos pust ravno na moj rojstni dan, za katerega si želim, da je ovekovečen s torto in ne krofi (čeprav bi torta iz krofov teoretično tudi prišla v poštev), sem se odločila, da se bom sladkala s krofi teden vnaprej. Tu v Belgiji pust skorajda ne obstaja (le kakšno otroško rajanje tu pa tam), kar včasih pogrešam, vedno sem se rada našemila (in se basala s krofi seveda).

Donuts, they sure are a treat. My grandmother used to make tons of them every year, usually filled with apricot jam. I loved to eat them while they were still warm, you could easily eat a couple and then you’d be left with a very heavy stomach afterwards. This year I decided to switch the traditional, fried, delicious, sugar loaded donut for something more healthy (I’m just saving myself for the cake next week). I used the basic donut recipe and swapped some of the ingredients with more healthy ones. I replaced a bit more than a third of the white flour with whole wheat, used coconut oil instead of butter and almond milk instead of cow’s milk.

Krofi so poslastica. Moja nona jih je vsako leto naredila en milijon, tistih polnjenih z marelično marmelado. Najraje sem jih jedla, ko so bili še topli, takih se hitro prenaješ. Zaradi tega se je vsako leto pust pričel z bolečinami v želodcu. Letos sem te tradicionalne, cvrte krofe zamenjala z nečim bolj zdravim (v bistvu se le šparam za torto drugi teden). Uporabila sem klasičen recept za krofe in zamenjala nekaj sestavin z bolj zdravimi. Tretjino bele moke sem zamenjala za polnozrnato, uporabila sem kokosovo olje namesto masla in mandljevo mleko namesto kravjega.

The key to good donuts is a warm kitchen that makes the yeast feel all warm and cosy and enables it to do its job – to leaven the dough. Donut dough should be allowed to “rise” twice. First, when the dough is made and then when the donuts are shaped, this is what makes donuts all fluffy and soft. Donuts are normally fried (and I do love them fried), but this time I decided to bake them, so the treat is more healthy. Baking makes donuts more “bready”, but when slathered with jam they are delicious nonetheless. However, if you want these donut bites to be the real deal you can still fry them instead of baking them, the recipe stays the same.

Ingredients
  1. 1 1/2 cup (190 g) all purpose flour
  2. 1 1/4 cup (150 g) whole wheat flour
  3. 2 tbsp cocoa powder
  4. 1 tbsp caster sugar
  5. pinch of salt
  6. 1 packet instant yeast
  7. 2/3 cup (170 ml) luke warm almond milk (use more if needed)
  8. 2 tbsp coconut oil
  9. 2 egg yolks
  10. 2 tbsp caster sugar
  11. 1 sachet vanilla sugar
  12. 1 tsp vanilla bean paste
  13. 1 tbsp rum
  14. Squeeze of lemon juice
  15. Powdered sugar and jam to serve
Instructions
  1. Mix the flours, cocoa powder, sugar, salt and yeast.
  2. In a separate bowl beat the egg yolks with the remaining sugar, add the vanilla bean paste, rum and lemon juice.
  3. Mix the dry ingredients mixture with milk.
  4. While kneading add coconut oil and the egg mixture.
  5. Knead until a smooth dough forms that does not stick to the sides of the bowl.
  6. Cover and let rise for approximately one hour in a warm place.
  7. Preheat the oven to 190°C (370°F).
  8. Knead the dough briefly.
  9. Roll out the dough about 0,5 inch thick.
  10. Using a round cookie cutter, cut out the donuts.
  11. Place the donuts on a floured baking sheet and let rise for 15 min.
  12. Turn the donuts over and let rise for additional 15 min.
  13. Bake the donuts for 30 min.
  14. Sprinkle with powdered sugar and serve with jam.
Notes
  1. If desired the donuts can be fried instead of baked.

Ključ do dobrih krofov je topla kuhinja, ki omogoča kvasu, da se sprosti in segreje in dobro opravi svoje delo. Testo za krofe mora vzhajati dvakrat. Prvič takoj ko je narejeno in drugič, ko je že v obliki krofov, to naredi krofe mehke in puhaste. Pravi krofi so cvrti (in take obožujem), ker pa je bil moj cilj narediti bolj zdravo sladičko, so moji pečeni. Ti so bolj “kruhasti”, a ko jih namažemo z marmelado nič manj slastni. Če želite tiste ta prave, pa lahko tudi te ocvrete, recept ostane enak.

Ingredients
  1. 190 g bele moke
  2. 150 g polnozrnate moke
  3. 2 žlici pravega kakava v prahu
  4. 1 žlica sladkorja
  5. Ščepec soli
  6. Zavojček instant kvasa
  7. 170 ml mlačnega mandljevega mleka (uporabite več, če je testo presuho)
  8. 2 žlici kokosovega olja
  9. 2 rumenjaka
  10. 2 žlici sladkorja
  11. Zavojček vanilijevega sladkorja
  12. 1 žlicka vanilijeve paste
  13. 1 žlica ruma
  14. Žlicka limoninega soka
  15. Sladkor v prahu in marmelada
Instructions
  1. Zmešamo moki, kakv v prahu, sladkor, sol in kvas.
  2. V ločeni posodi zmešamo rumenjaka s preostalim sladkorjem, dodamo vanilijevo pasto, rum in limonin sok.
  3. V suhe sestavine vmešajmo mleko.
  4. Vmesimo kokosovo olje in jajčno mešanico.
  5. Mesimo toliko časa dokler ne dobimo gladkega testa, ki se ne oprijema sten posode.
  6. Pokrijemo in testo pustimo vzhajati na toplem približno eno uro.
  7. Pečico segrejemo na 190°C.
  8. Testo na hitro premesimo.
  9. Testo razvaljamo na 1,5 cm debelo.
  10. Z okroglim modelčkom za piškote izrežemo krofke.
  11. Krofke položimo na pomokan pekač in pustimo vzhajati 15 min.
  12. Krofke obrnemo in jih pustimo vzhajati nadaljnih 15 min.
  13. Krofke pečemo 30 min.
  14. Pečene krofke posujemo s sladkorjem v prahu in postrežemo z marmelado.

  1. Če želite, lahko krofke tudi ocvrete.
