Whole30 week 2 recap

I’m halfway through my Whole30 program and I’m still managing. This week brought along a couple of challenges – dinner out with the girls, barbecue party after work on Friday and a very lazy weekend that just called after some baking. I (more or less) successfully passed them all and I have to say I’m quite proud of myself. After two weeks I do not feel any different than I did before, I guess the changes still need to come. Maybe the changes are bigger if you had a really shitty diet before starting the Whole30 and that was not the case with me. I am breaking one of the rules though – I often have a snack in the afternoon, not because of the habit, but because I just get really hungry. They advise against having more than 3 meals per day and if you’re hungry in between they suggest to increase the size of the meal, but I can’t always do that as I usually eat the size of the meal that is comfortable for me (volume wise), if I would eat more, I would feel stuffed, so I just decided to have the snacks when I’m hungry. I will try to work on getting them down to a minimum though. Shrimp ceviche my way

Since I started my journey with Whole30 (read more about it here) I’ve put together a lot of dishes that I came to love. One of those is shrimp ceviche. Ceviche is a dish originating in Latin America normally prepared with fresh fish that are “cooked” with citrus juices and mixed with different spices and herbs. Whole30 week 1 recap

A while ago I decided I needed to finally take the plunge and see if my afternoon slump and my rather unclear skin are food-induced. To see, if food has an effect, I first needed to eliminate possible “trigger” foods, so I chose to do the Whole30 program. This program should reset your body and change your relationship with food (which I don’t really need, but OK) and the end results promise increased energy, clear skin, reduced inflamation and often weight loss (which should not be the main reason why you’d do the program, but hey, it’s a nice extra). As it’s supposed to eliminate the cravings and break the cycle of emotional eating you are not supposed to recreate treats with compliant ingredients, so paleo desserts are off limits. Breakfast in Alice’s hidden garden

There are too little weekends, or they are too short, or I’m just too busy. Anyway, I’m lacking weekends when I have time to go at ease to the center and have a nice breakfast. And when I do have time the weather is shitty. So here I am posting about a place, where I went almost a month ago and dreaming about when am I going to do it again. My mother’s French salad…

…that is actually a bit Russian (the salad, not my mother, although we are Slavs, so you never know). In our family there is a tradition – on 1st of May we go on a road trip. We did this almost every year, always with a big crowd, our family, my uncle’s, my great aunt’s, friends of my aunt and so on (you get the picture), our caravan was road tripping across Slovenia like a bunch of gipsies. In the last years I missed a couple of these trips, due to the fact that I am not always home then, but I will always feel the need to go on a trip in May. Poppy seed and strawberry cake with cream cheese and greek yogurt frosting

After a week of cold and rain, we woke up on Sunday with perfect blue sky and sunshine. It was about freakin’ time, because the lack of real spring was making me feel depressed. I’m the person that thrives when temperatures are above 25°C, so Belgian weather is and always will be a struggle. But let’s focus on the good days and Sunday was one of those. It was a picture perfect day – woke up a bit later than normal, had a lazy morning with some good pastry for breakfast, went for a run to burn that pastry, had a healthy lunch, an afternoon bake sesh’ and “stuck-in-the-couch” evening, only a day at the beach would beat it.  Continue reading “Poppy seed and strawberry cake with cream cheese and greek yogurt frosting”

Foodtruck boulevard

It’s been a while since I went to a “food event”, but spring is here and with it comes the new season of food festivals, barbecues and other little life’s pleasures, like sitting outside with a nice glass of wine (or whatever floats your boat) and enjoying the sun. On Sunday there was a small foodtruck festival 5 min away from our place so we decided to check it out. Potica with walnuts and pecans

Easter is here. I always liked this holiday. Easter brings along all the good stuff – coloured eggs, enormous amounts of chocolate and other goodies, that appear on our tables only in festive times. But apart from that, I like Easter because it announces that spring is here which brings along longer days and warmer, sunnier weather. I don’t really do anything special on Easter, other than visiting family, but despite that I always make sure I colour the eggs and make potica.  Continue reading “Potica with walnuts and pecans”

Happy birthday to me! And a brownie cake with chocolate truffle frosting, caramel sauce and almond praline.

On Saturday it was my birthday, it’s the day when I have a right to my own cake, which, since I don’t live at home anymore and thus away from another potential cake maker – my mother, have to make myself. That is OK though, it’s an activity I like (if everything goes as planned) and always results in something good. This year I wanted something extra chocolatey so I went for a cake with brownie bottom, white chocolate and milk chocolate truffle cream and, and, and caramel sauce in between layers. Oh and there is also almond praline hidden in there. Don’t judge me – it was my birthday and I can eat whatever I want.  Continue reading “Happy birthday to me!
