Apple compote

Autumn is here. You can feel it, you can see it and you can smell it. And everybody talks about it, some being ecstatic about it, going all crazy for plaid and pumpkin and others (like me) trying to find little things that would make it more cheerful, because what lays ahead are just dark mornings and cold. There is one good thing about autumn – apples and pears (and cuddling under the blanket with hot chocolate of course). I’m one of those old school people, I think apple is the main star of autumn and not pumpkin. Not that I don’t like pumpkin – I do, a lot, but lately it’s everywhere, you get tired of it. It’s like the new hit song that you like when you hear it for the first time, but then it’s the only thing you hear on the radio for the next couple of months and you end up hating it. Not the apple though. Jesen je tukaj. Lahko jo čutiš, lahko jo vidiš in lahko jo vohaš. In vsi govorijo le o tem, eni skačejo od navdušenja in drugi (kot sem jaz), ki poskušamo najti malenkosti, ki bi jesen naredile bolj veselo, ker, priznajmo si, kar nas čaka so le temna jutra in mraz. Kljub temu pa ima tudi jesen svoj čar, ta car so jabolka in hruške (in cartanje pod odejo s skodelico vroče čokolade). Ko sem bila majhna je bila ena prvih pesmic, ki sem jih prepevala “Ježek teka, teka in se kotali. Jabolka in hruške nabadati hiti.” Po mojem mnenju sta ta dva sadeža zvezdi jeseni, ki se ju ne bom nikoli naveličala.

What you do hear a lot about lately is apple picking. Everybody goes apple picking, you are not ‘in’ if you don’t go apple picking. I also picked some apples last week, but I did it in the store since that is the only place I can do that. I wanted to make something sweet and healthy and I didn’t have time for baking. I found apple compote to be the perfect answer to my wishes. It’s actually almost an apple sauce, but I like it this way. You can use any kind of fruit (I love to mix apples, pears and plums for this), you just have to adjust the amount of sugar in it.

Zadnje čase se veliko govori o nabiranju jabolk. Vsi nabirajo jabolka, nisi ‘in’, če ne greš nabirat jabolk. Jaz sem jih tudi šla nabirat prejšnji teden, v trgovino, to je pač edini kraj, kjer to lahko počnem. Zaželela sem si nekaj sladkega in dokaj zdravega in nisem imela časa za peko. Na misel mi je prišel jabolčni kompot, to je bilo to kar potrebujem. V bistvu je to skoraj jabolčna čežana, le da so tu pa tam večji koščki jabolka, meni je tako všeč. Za to lahko uporabite katerokoli sadje (jaz rada zmešam jabolka, hruške in slive), le količino sladkorja je potrebno prilagoditi.Apple compote
You can use up this compote/sauce in many ways. I like to eat it on its own, crumble in a butter cookie, put it in plain yogurt (it’s healthier than buying a fruit yogurt), put it on pancakes (like this ones for a nutritious breakfast), on oatmeal and so on. This time I used it with the Emperor’s mess (or Keiserschmarren), I will post the recipe for this later this week.

Not overly sweet, apple compote.

Ingredients
  1. 5 big sweet apples (you can use more sour ones, but then you need to adjust the sugar)
  2. 1/3 cup water
  3. 1/4 cup brown sugar
  4. 1/2 tsp cinnamon
  5. 2 sticks cinnamon
  6. 1/4 tsp nutmeg
  7. pinch of salt
  8. Optional: a used vanilla pod (I had one laying around)
Instructions
  1. Peel the apples and chop them in blocks.
  2. Put all the ingredients in a skillet.
  3. Cook on medium heat until fragrant and the apple soften 15 min or until it reaches the desired consictency (the longer you cook, the less apple chunks will be left).
  4. Remove the cinnamon sticks (and the vanilla pod if using).
  5. Serve warm.
Notes
  1. You can add a splash of rum or brandy for an extra kick. Raisins are also a great addition.

Apple compote
Ta kompot/čežano lahko uporabite na več načinov. Jaz ga rada jem samega, vanj zdrobim masleni piškot, dam ga v navaden jogurt (veliko bolj zdravo kot kupljeni sadni jogurti), na palačinke (kot te za hranljiv zajtrk), vmešam ga v ovsene kosmiče in tako naprej. Tokrat sem ga uporabila s cesarskim pražencem, šmornom, recept bom objavila kasneje ta teden.

Ingredients
  1. 5 večjih, sladkih jabolk (lahko uporabite kisla jabolka, a je v tem primeru potrebno prilagoditi količino sladkorja)
  2. 80 ml vode
  3. 50 g rjavega sladkorja
  4. 1/2 čajne žličke cimeta
  5. 2 palčki cimeta
  6. 1/4 čajne žlicke muškatnega oreščka
  7. ščepec soli
  8. Po želji: že uporabljen strok vanilije za aromo (jaz sem imela enega na voljo)
Instructions
  1. Jabolka olupimo in narežemo na kocke.
  2. Vse sestavine združimo v kozici.
  3. Kuhamo na srednjem ognju dokler se jabolka ne zmehčajo 15 min (ali več, če bi raje imeli čežano).
  4. Odstranimo cimetove palčke (in strok vanilije, če smo ga uporabili).
  5. Postrežemo toplo.
Notes
  1. Po želji lahko dodamo žlico ruma ali konjaka za več okusa. Tudi rozine so odličen dodatek.
