Apple and pear pie with pecan frangipane

The first time I ever made a pie, was for Laurens. A deep dish apple pie. Since then I made several and most of them were apple or pear pie variations. I think these two fruits are perfect for a pie, pie is a humble dessert and so are apples and pears. I’ve never been a big fan of pies, I found them boring, but lately I’m becoming a big fan, especially of the buttery and flaky crust.

Prva pita, ki sem jo kdaj koli spekla, je bila za Laurensa. Jabolčna pita. Od takrat sem naredila že veliko pit, večina le-teh je bilo jabolčnih ali hruškinih. Zdi se mi, da so jabolka in hruške popolno sadje za pite, pita je taka preprosta sladica in prav tako so jabolka in hruške. Nikoli nisem bila velika ljubiteljica pit, zdele so se mi dolgočasne, a zadnje čase so mi prirasle k srcu in še posebno obožujem njihovo rahlo, masleno, skorjico.

Yesterday I really felt like baking a pie. I put on a nice relaxing music, made the dough, chilled the dough and then I realized that I miscalculated the amount of butter in it, off in the trash it went. I had to then run in the store to get more butter, because I didn’t have enough left to make a new dough. 2nd attempt was more successful, but you know there is this Murphy’s law that seems to apply to everything I do. I nicely put the crust in the pie pan, made a nice braided border and when I wanted to put it in the fridge to chill again I dropped everything on the floor.

Včeraj se mi je res prilegla peka pite. Prižgala sem si sproščujočo glasbo, naredila testo, ga postavila v hladilnik in se kar naenkrat zavedla, da sem narobe izračunala količino masla, no pa je šla v smeti. Potem sem ugotovila, da nisem imela dovolj masla za ponoven poskus, pižama dol, trenerka gor, hop na kolo in v trgovino. Moj drugi poskus je bil bolj uspešen, ampak saj poznate Murphijev zakon, ta se me drži kot klop. Testo sem ravno položila v model, naredila lep spleten rob in ko sem hotela vse skupaj postaviti v hladilnik, mi je vse zletelo na tla.

If this would happen to me a couple of years ago, I would go all crazy, probably yelling at everyone and everything, kicking things and throwing things on the floor. But not now, I just counted to ten, picked everything up, remade everything and finished the damn pie luckily without any other problems. I was actually quite proud of myself.

Če bi se mi to zgodilo pred nekaj leti, bi ponorela, najverjetneje bi se drla na vse in vsakogar v bližini, vse bi zmetala na tla in brcnila vsako stvar, ki bi mi prišla pod noge. Ampak tokrat sem le preštela do 10, vse skupaj pobrala s tal, ponovila vajo in končno končala presneto pito, (na srečo) brez nadaljnih problemov. Bila sem prav ponosna nase

Was it worth it? Well as a matter of fact it was, I think this pie is delicious. It’s a pecan pie, an apple pie and a pear pie all in one. The pecans are in a form of fluffy pecan frangipane and apples and pears add some moist. It’s not that hard to make, if you’re not miscalculating the ingredients, or being clumsy. It’s perfect for all the upcoming holidays and you can always make it even more delicious with a scoop of vanilla, or caramel, or butterscotch, or apple and cinnamon ice cream.

Ingredients
  1. 2 cups (240 g) all purpose flour
  2. Pinch of salt
  3. 1 tbsp caster sugar
  4. 1 2/3 stick (180 g) unsalted butter
  5. 1/4 cup (60 ml) cold water
  6. 1/4 cup (50 g) brown sugar
  7. 1/2 cup (100 g) caster sugar
  8. 1 1/3 stick (150 g) unsalted butter
  9. 2 eggs
  10. 1 tsp vanilla extract
  11. 1 2/3 cup 150 g ground pecan nuts
  12. 1/2 cup (50 g) all purpose flour
  13. 2 small apples
  14. 2 small pears
  15. 1 beaten egg
Instructions
  1. Preheat the oven to 180°C
  2. Mix flour, salt and sugar.
  3. Cut in the butter, rub the butter in the flour using your fingers or in a food processor (it's alright if there are some bigger pieces of butter in there).
  4. Add cold water and mix until combined.
  5. Shape the dough in a disk, wrap with foil and place in the freezer for 15 min (or if you have time in your fridge for 30 min).
  6. Cream the butter and sugar.
  7. Add the eggs one by one and then add the vanilla extract.
  8. Add the flour and ground nuts.
  9. Peel apples and pears, cut in half and remove the middle. Slice the halves in slices.
  10. Roll out the dough and line a pie dish (decorate the border of your pie as you usually do).
  11. Spread the frangipane on top.
  12. Add the sliced fruit halves, place on the pie and lean the slices on one side.
  13. Brush the borders with egg wash.
  14. Bake the pie for 45 min - 1 h until the crust is golden.

Ali je bilo vredno? Ja, v bistvu je res bilo, mislim, da je pita odlična. Je pita s pekan orehi, jabolčna pita in hruškina pita, vse v enem. Pekan orehi so del rahlega frangipana, jabolka in hruške pa so tam za sočnost. Priprava ni težka, če si z glavo pri stvari in nisi neroden ter je idealna za prihajajoče praznike. Če želiš, jo lahko narediš še bolj okusno s kepico sladoleda.

Ingredients
  1. 240 g moke
  2. Ščepec soli
  3. 1 žlica sladkorja
  4. 180 g masla
  5. 60 ml mrzle vode
  6. 50 g rjavega sladkorja
  7. 100 g belega sladkorja
  8. 150 g masla
  9. 2 jajci
  10. 1 čajna žlička vanilijevega ekstrakta
  11. 150 g zmletih pekan orehov
  12. 50 g moke
  13. 2 majhna jabolka
  14. 2 majhni hruški
  15. 1 jajce, stepeno
Instructions
  1. Pečico segrejemo na 180°C.
  2. Zmešamo moko, sol in sladkor.
  3. Narežemo maslo in ga zmešamo z moko, da dobimo zmes podobno drobtinam (če ostanejo posamezni večji koščki masla je v redu).
  4. Vmešamo vodo, da dobimo gladko zmes.
  5. Zavijemo v prozorno folijo in postavimo v zamrzovalnik za 15 min (ali hladilnik za 30 min, če imamo več časa).
  6. V skledi kremasto umešamo zmehčano maslo in sladkor.
  7. Dodamo jajci eno po eno in vanilijev ekstrakt.
  8. Vmešamo mlete pekan orehe in moko.
  9. Jabolka in hruške olupimo, prerežemo na pol in odstranimo peške. Polovice narežemo na rezine.
  10. Testo razvaljamo in položimo v model za pite.
  11. Na testo namažemo frangipan.
  12. Polovice jabolk in hrušk postavimo na frangipan in rezine nagnemo na eno stran.
  13. Pečemo 45 min - 1 ure, da se skorjica zlato rjavo obarva.
