Apple and marzipan galette

If there is one advantage of short autumn (and winter) days, it is that they force you to get in the cosy mode earlier in the day. And when I’m in the cosy mode I always feel like baking something. There is something comforting in the smell of fresh baked goodies. And eating them is comforting as well.

Če je kaj dobrega v kratkih jesenskih (in zimskih) dneh je to, da te tema prisili v to, da se zgodaj ‘zabubimo’ doma. V takih trenutkih, se mi vedno prileže kaj dobrega speči. Nekaj prijetnega je v vonju sveže pečenih dobrot. Prijetno jih je tudi jesti.

You know when I also feel like baking, when I need to study. So yesterday I needed to study Dutch and as usual everything else was more interesting than studying, baking being (of course) on top of my list. I didn’t want to loose too much time, so I made an apple galette because it’s quick, I didn’t need to look for a recipe and it’s perfect for this time of the year.

Veste kdaj še rada pečem? Ko se moram učiti.Včeraj sem se morala učiti nizozemščino in kot vedno je bilo vse drugo bolj zanimivo kot učenje, peka še najbolj. Nisem želela izgubljati veliko časa, zato sem naredila jabolčno pito z marcipanom. Priprava je enostavna, ni mi bilo potrebno iskati recepta in jabolčne sladice so popolne za ta letni čas.

I love making galettes, they are such an effortless dessert, they look pretty and rustic and they are delicious. You don’t really need a recipe for them, you just need to make a pie crust, top it with fruit, fold the corners and bake. I made mine a little bit special by adding a thin layer of marzipan on top of the crust. I think marzipan pairs perfectly with cinnamon spiced apples. At the end I sprinkled everything with brown sugar, for a slight caramel flavour. It was a perfect comfort food for my study session, a dessert after dinner and today’s breakfast.

Ingredients
  1. 1 1/2 cup (180 g) all purpose flour
  2. 1 stick (120 g) unsalted butter
  3. Pinch of salt
  4. 1 tbsp caster sugar
  5. 4 tbsp cold water
  6. 7 oz (200 g) marzipan
  7. 2 medium apples
  8. 1 tbsp cinnamon
  9. 2 tbsp brown sugar
  10. 1 egg beaten
Instructions
  1. Preheat the oven to 180°C
  2. Mix flour, salt and sugar.
  3. Cut in the butter, rub the butter in the flour using your fingers or in a food processor (it's alright if there are some bigger pieces of butter in there).
  4. Add cold water and mix until combined.
  5. Shape the dough in a disk, wrap with foil and place in the freezer for 15 min (or if you have time in your fridge for 30 min).
  6. Peel the apples and cut them in slices.
  7. Place the apples in a bowl and mix with cinnamon.
  8. Roll out the marzipan in about 1/4 inch (0,5 cm) thin circle, set aside.
  9. Take the dough out of the freezer and roll it out to make a 1/4 inch (0,5 cm) thin circle that is about 2 inch wider than the marzipan circle.
  10. Place the marzipan on the dough, spread the apples over the marzipan and sprinkle them with brown sugar.
  11. Fold the edges of the dough and brush with egg wash.
  12. Bake for 40 min.

Zelo rada pečem pite, ker so zelo enostavne, izgledajo lepo in so slastne. Lahko jih narediš tudi brez recepta, poznati moraš le recept za testo, imeti pri roki kakšno sadje in segreto pečico. To jabolčno pito sem naredila malo bolj posebno tako, da sem dodala tanko plast marcipana na testo. Po mojem mnenju je marcipan popoln par s cimetovimi jabolki. Na koncu sem po vrhu potresla rjav sladkor, za rahel okus po karameli. Pita je bila idealna tolažba med učenjem, sladica po večerji in današnji zajtrk.

Ingredients
  1. 180 g bele moke
  2. 120 g masla
  3. Ščepec soli
  4. 1 žlica sladkorja
  5. 60 g mrzle vode
  6. 200 g marcipana
  7. 2 jabolki
  8. 1 žlica cimeta
  9. 2 žlici rjavega sladkorja
  10. 1 jajce, stepeno
Instructions
  1. Pečico segrejemo na 180°C.
  2. Zmešamo moko, sol in sladkor.
  3. Narežemo maslo in ga zmešamo z moko, da dobimo zmes podobno drobtinam (če ostanejo posamezni večji koščki masla je v redu).
  4. Vmešamo vodo, da dobimo gladko zmes.
  5. Zavijemo v prozorno folijo in postavimo v zamrzovalnik za 15 min (ali hladilnik za 30 min, če imamo več časa).
  6. Olupimo jabolki in ju narežemo na rezine.
  7. V posodi rezine jabolk zmešamo s cimetom.
  8. Marcipan razvaljamo v krog, debel 0,5 cm.
  9. Testo vzamemo iz zamrzovalnika in ga razvaljamo v krog, ki je v premeru 5 cm večji kot marcipanova plast.
  10. Marcipan postavimo na testo.
  11. Jabolka razporedimo po marcipanu in jih potresemo z rjavim sladkorjem.
  12. Robove testa zavijemo proti sredini in premažemo z jajcem.
  13. Pečemo 40 min.
