Greek yogurt pancakes

Monday mornings, nobody likes them. I read a quote somewhere saying that they are like the person that shows up at your party uninvited, you go along with it, but you definitely don’t like it. What I like though are little traditions, they are something you look forward to, little moments you created because they make you feel good, totally the opposite from a Monday morning. A couple of months ago, my boyfriend and I started a new tradition that would make these days a bit more pleasant. Well to be honest, I started it and he just has to accept it. So, me, the person whose faith of the day depends on the quality of breakfast she had, proclaimed Mondays to be “Pancake day”. Now we start every week, with a happy face – I mean, how can you not be happy when you have pancakes for breakfast.
These are very easy to prepare, and are done in under 15 min.

Ponedeljkova jutra, nihče jih ne mara. Nekje sem prebrala opis, da so kot oseba, ki je prišla nepovabljena na zabavo, dogodek sprejmeš, ampak ti vsekakor ni pri srcu. Kar mi je pri srcu, so majhne tradicije, nekaj kar z veseljem pričakuješ, trenutki, ki si jih ustvaril, ker te osrečujejo, nekaj popolnoma nasprotnega od ponedeljkovih juter. Nekaj mesecev nazaj sva s fantom pričela novo tradicijo, ki bi nama polepšala ta prvi delovni dan po vikendu. No, po pravici povedano sem s tradicijo začela jaz, on se mora samo sprijazniti z njo. Torej, jaz – oseba katere usoda dneva je odvisna od kvalitete zajtrka, sem razglasila ponedeljke za “Dan palačink”. Zdaj začneva vsak teden z nasmeškom na obrazu, no kdo pa ni vesel s palačinkami za zajtrk.
Te palačinke so zelo enostavne in pripravljene v 15 minutah.

Ingredients
  1. 1 container of greek yogurt (cca 170 g)
  2. 2 eggs
  3. 4 tbsp flour (any kind)
  4. 1/2 tsp baking powder
Instructions
  1. Beat the eggs and greek yogurt in a bowl.
  2. Add the flour and baking powder and mix well.
  3. Bake the pancakes in a buttered pan until brown on both sides.

You can modify them with whatever add-ins you fancy. I always add 2 scoops of protein powder in the batter if I have a workout scheduled that day. They are great with blueberries (or any kind of berries), bananas, nuts, chocolate chips. Make them a chocolate pancake with a tbsp of cocoa powder. The possibilities are countless. I like to top mine with fresh fruit and maple syrup, but again feel free to cover them with whatever you like (p.s. Nutella is always great).

Palačinke z grškim jogurtom

Rahle, proteinske palačinke z grškim yogurtom.

Ingredients
  1. 1 lonček grškega jogurta (cca 170 g)
  2. 2 jajci
  3. 4 žlice moke (katerekoli)
  4. 1/2 čajne žličke pecilnega praška
Instructions
  1. V skledi stepemo jajci z grškim jogurtom.
  2. Dodamo moko in pecilni prašek ter dobro zmešamo.
  3. Palačinke pečemo na maslu, da postanejo zlato rjave barve.

Lahko jih prilagodiš svojemu okusu in potrebam. Če imam na urniku fitnes, jim dodam dve merici proteinskega praška. Odlične so z borovnicami (ali kakršnimkoli jagodičevjem), bananami, oreščki, čokoladnimi kapljicami. Če imaš raje čokoladne palačinke, v zmes dodaš žlico kakava v prahu. Možnosti je neskončno. Jaz jih najraje jem s svežim sadjem in javorjevim sirupom, tebi pa prepustim proste roke (p.s. Nutella je vedno odlična izbira).
